🍩🥯 Buns and donuts Recipe 🥯🍩

Yields 15-20 donuts

😍Ingredients:

🍫2.5 tsp active dry yeast
🍫3/4 cup warm milk
🍫5 tbsp sugar
🍫2 cups maida
🍫2 tbsp oil
🍫1/4 tsp salt

🥯Oil for deep frying

😍Instructions:

1. Take the warm milk in a bowl (not hot or cold) and add the sugar, mix and then add yeast to it. Mix well. Now, let the mixture rest for about 10 minutes.
2. Now, you can see that the yeast mixture has turned frothy.
3. In a large bowl add the other ingredients and mix well.. Now, gradually add the yeast mixture and mix well
4. Knead the dough well for about 10 minutes or until it becomes non sticky and soft. (The dough will be sticky so grease your hands with oil or some flour).
5. Once knead well, rub some oil over the dough and let it rest in the same large bowl for about 1 hour in a warm place.
6. After an hour, the dough would have risen well. It will have doubled or tripled it's original size.
7. Now, punch the dough and again knead it well. Then, make several small sized balls out of the dough.
8. Let the balls rest for another 15-20 minutes as the dough balls would rise again.
9. Now, to make donuts, make a hole in the middle and for the buns leave it as it is.
10. Fry them in hot oil until it turns brown. That's all!😍😋 Buns and donuts ready.. You can dip or fill them with any type of sprinklers or jams etc.
My fav is chocolate and icing sugar coated doughnuts and chocolate sauce filled buns.
Note:
Do check if the yeast is from fresh batch, for better rise.
The milk must be warm( your fingers should be able to withstand the heat). Otherwise, the yeast will not froth well.
Also, kneading is important to get soft buns. Be patient and knead until smooth and non sticky.
Beware! The dough will be too messy at first once, you start kneading it will start to become less sticky.
To fill buns, make a small yet a little deep cut into the bun through a side and pour the filling into it.

🍌Easy peasy chocolate banana bread 🍞✨
Ingredients:
🍌 3-4 large ripe bananas
🍌 1 egg
🍌 1/4 cup oil/ butter
🍌 1 tsp baking soda
🍌 3/4 cup sugar/ country sugar
🍌 1 1/2 cups wheat flour
🍌 1/4 tsp salt
🍌 1/4 tsp vanilla extract
🍌 1 tbsp cocoa powder
🍌 1/4 cup boiled milk
🍌 Chopped nuts (optional)
How to:
1. Mash the bananas in a large bowl until smooth.
2. Add oil, vanilla extract, baking soda, salt, egg and mix them well.
3. Add sugar, wheat flour, cocoa powder to the mix and stir well into a smooth batter. You can add the chopped nuts at this stage for a little crunch.
4. The bread mix will have a thicker yet spreadable consistency. If you find it difficult to mix, then add a little bit of milk accordingly.
5. Preheat the oven or cooker for about 10 minutes.
6. Transfer the bread mix to a greased baking utensil, drizzle a few chopped nuts over the batter(if using) and bake it for about 25-30 mins at 350 F or on medium high flame. (you know right, insert a wooden stick or toothpick and if it comes out clean, the goodness is ready!)
Cool it, slice it and enjoy!! 🍫🍌🍞
Yummy banana goodness ready within an hour!

🥭Mangoes, and mangoes everywhere🥭 I wanted to have the king of fruit for some more time as the season will soon end and so..
Here we go, I just made an amazing mango jam at home today with just 3 ingredients😍
All you need is some mangoes, sugar and lemon juice😇
Ingredients:
🥭 250 gms of cubed or chopped mangoes without skin
🥭 100 gms of white or brown sugar( if the mangoes are too sweet then add according to your preference)
🥭 1 tbsp lemon juice
How-to:
🥭 Add all the chopped mangoes into a mixie jar and blend them into a smooth paste.
🥭 In a non stick pan, add the mango puree and sugar and stir consistently in medium flame.
🥭 Stir for about 10 minutes approximately or until the jam thickens.
(To check consistency: take a small amount in a plate and flip it, the jam must not fall off from the plate😅)
🥭 After checking the consistency, add some lemon juice and stir it well. Switch off the flame in about 1-2 minutes.
Yummy yummy mango jam is ready to spread. 😋🤤
Once it cools down, store in a dry and air tight container.
Stays good for about 2-3 months. Make sure to use a dry spoon while serving.

Karunai kizhangu masala or Yam masala😋
Try this spicy masala instead of yam roast.. You'll definitely love it😍
Ingredients:
⚜ Yam - 1 cup
⚜ Onion - 1 medium size
⚜ Red chillies - 2 to 3
⚜ Peppercorns - 1/2 tbsp
⚜ Jeera - 1/2 tbsp
⚜ Curry leaves - a strand
⚜ Salt as per taste requirement
For tempering:
⚜ Oil - 2 tbsp
⚜ Mustard seeds - 1/2 tsp
⚜ Split urad dhall - 1/2 tsp
⚜ Turmeric powder - 1/4 tsp
How to:
⚜ Cook yam with a little salt in a pressure cooker for about 4 to 5 whistles. Drain all the water and keep it aside.
⚜ Grind the onion and red chillies together into a fine paste.
⚜ Pulse the jeera and peppercorn into a coarse powder.
⚜ In a kadai, Add Oil and all other tempering ingredients.
⚜ Once the urad dhall has browned, add the onion-chilli paste and saute till the raw smell is completely gone.
⚜ Add the yam and thoroughly mix the yam along with the masala.
⚜ Add the curry leaves and salt and mix it together.
⚜ Cook for about 5 minutes.
⚜ Finally, switch off the flame and add the pepper-jeera powder. Give it a nice mix.
That's it.. Yam masala ready! Serve hot with rice and rasam. It's a versatile masala and even goes well with fried rice or any variety rice as well..

Blue heaven flawless finishing powder
Cost: ₹125/- MRP but, during offers you can even get it below ₹100/- on app.

Comes in a plastic container with a tap and release cover and a powder sponge. The packaging is sturdy. The quantity is worth the price.

Pros:
❣ Has two shades available on the app one for a warm and another for a cool undertone.
❣ Affordable, doesn't irritate skin.
❣ Provides a matte finish, a small quantity does the job for once.

Cons:
❣ Is fragrant and might not please everyone.
❣ Isn't very long lasting. Lasts about 4 hours or so.
❣ Isn't very much sweat absorbing, might need a touch up in that case.

Verdict:
❣ Must buy for beginners and occasional makeup users.
❣ Worth the money.

Basundi cake✨

*Dry ingredients:*
Maida or All purpose flour - 1 cup (240 ml)
Baking powder - 1 tsp
Cardamom powder - 1 tsp

*Wet ingredients:*
Baking soda - 1/2 tsp
Buttermilk - 3/4 cup
Powdered sugar - 1 cup
Almond or vanilla extract - 1/2 tsp

*Other ingredient:*
Basundi milk - 3/4 cup

*How to bake using pressure cooker:*

1. Fill the base of your cooker with salt or sand and place a stand on it.
2. Preheat the pressure cooker for about 10 mins in medium flame.
3. Meanwhile, seive the dry ingredients into a bowl.
4. In another bowl add the wet ingredients and mix them. Leave it undisturbed for about 5-7 minutes. You will see a frothy layer on it.
5. Now, combine the wet ingredients with the dry ingredients and mix thoroughly.
6. To the cake batter, add the basundi milk and mix well. Do not add too much milk as it may make the batter runny.
7. Transfer the batter to a greased cake tin or baking pan and pat it to level the batter.
8. Bake the cake for about 35-45 minutes.
9. After 35 minutes, check if it's completely baked by inserting a tooth pick.
10. Yaayy! You baked basundi cake.
11. Prepare the whipping cream, decorate the cake and enjoy it plain or with chilled basundi.

For whipped cream, I used store bought whipping powder and replaced half of the mentioned milk quantity with basundi milk.

If using oven, preheat and bake at 350°F or 180°C for 30-40 minutes.

Long short story:
Shifted back to coimbatore from mom's place..
Had to adjust back to life here and also take care of the baby..
When I started to thrive got tested positive for COVID-19..
Got hospitalized and Recovered..
and
Now,
Slowly and steadily trying to get back to my routine.. My kind request to you all.. Please make sure you wear mask and sanitize every time you step out of the house.. Once affected, this virus doesn't let you to return to your old lifestyle.. Better safe than sorry..😇
