But we love to swim against the current where there is a genuine cause. Thermocol or plastic cups are neither eco-friendly nor pro-health option for solidifying patali cakes. So we have opted for bio-degradable, food-grade paper cups with lid.

🔹 Our patali is pure. There is no white sugar mixture or any preservatives in it. So you have to keep it in refrigerator and you have to use clean, dry spoon/knife when cutting a chunk.

🔹 For our Nolen gur, it is also to be kept in fridge.

🔹 Please don't let your child insert finger directly into the jar of Nolen gur. Never use wet or dirty spoon to take a scoop. Make sure no entry of water.

🔹 It is better to consume gur and patali (or any other food) as fresh as possible. However it is possible to preserve well our Nolen gur (in clean, dry glass container) for upto 8 months and patali (in paper cup) for upto 10 months from now if kept in fridge. You have to ensure cleanliness.

🔹 For long preservation of Nolen gur, you are advised to heat it near 100 degree centigrade in a steel container for 15 minutes every three months.

🔹Earthen pots are attached to the top of specially prepared date palm trees prior to the evening. Throughout the night fresh sap percolates down through the wooden 'nal' fixed to the palm tree and gets collected into the earthen pot. At the dawn— before the Sun rise— the 'Shiuli' brings down his pots and gather all the sap in his 'karai/taoa'. The next step is to process the sap over earthen oven with very controlled heating to produce the desired delicacy — Nolen Gur. The whole process, from the beginning to the end, is based on scientific principles perfected over thousands of years of dedicated practice by the rural jaggery artisans— the 'Shiulis'.

🔹Earthen pots are traditionally used in India for date palm jaggery production. These pots are made with special type of clay mixture. Having microscopic pours all over the body, these pots allow a part of the moisture present in the date palm sap to be evaporated, which keeps the inside sap very cold. Such low temperature of the date palm sap in earthen pots prevents growth of Yeast and possibility of fermentation. Time to time the Shiulis purify the earthen pots with lime and fire for repeated use.

The Sundarbans— home to Royal Bengal Tiger— is the largest mangrove forest in the world. It covers approximately 10,000 square km coastal area out of which about 40% is in India. The Indian part of the forest is in the districts of North & South 24 Parganas of West Bengal state.

The Sundarban Forest (Badaban in local language) is full of water bodies like river, canals and creeks. From time immemorial, people from the adjacent villages have been venturing into the dense mangrove forest inhabited by tigers, crocodiles and snakes to collect the most precious produce of the forest, Wild Honey.

Among the different species of bees in the Sundarbans, 'Bagha Mou' (apis dorsata) make big hives and much honey. It has been seen that the honey collected from these hives are the best honey in the Sundarbans. This aromatic honey is light amber to dark red in colour and unmatched in taste with great medicinal values.

'Maulis' (honey collectors), as they are called in Bengali, often risk their lives in the peak season to collect honey. Peak season starts from March and continues upto May-June. Before entering into the forest in small groups, the 'moulis' offer prayer to 'Ban Bibi'— the forest goddess of the Sundarbans. They use smokers to keep away the bees and collect the honey. This honey contains the nectar of various mangrove flowers, such as, Khalisa, Hental, Garan, Bain, Keora, Gewa, Golpata, Horgoja, etc.

Sundarban raw forest honey is nature's great blessing. It contains small amounts of bee pollen, royal jelly, propolis and beeswax apart from natural sugars.
