- : With all natural ingredients, this Creamy yummy hand - made is ready only after an elaborate process. It takes a minimum of 48 hours for the real creamy taste.

As children, we used to find the โ€œhanging of the curdโ€ quite funny and amusing ๐Ÿ˜€. Also, felt that itโ€™s making our wait longer for the final product which we were so eager to gobble up ๐Ÿ˜„. However, now we know how crucial this step is in making ๐Ÿ˜

- - A speciality of the season, crispy & with a perfect balance of spices and sweet N sour taste

A certain variety of the leaves is used for this. The leaves are plastered with a flavourful batter and are rolled into a pinwheel. The steamed rolls are cut into pieces. They can be either shallow fried to make into Aalu Vadis ( Maharashtrian style) or can be sautรฉed in vaghar/ tempering ( Gujarati style, known as Patra). Either way, it tastes great ๐Ÿ‘Œ๐Ÿป๐Ÿ˜‹

is celebrated every year from 1st August to 7th August. It aims at highlighting the benefits of for the health of babies. It also encapsulates a wider objective of the motherโ€™s health by stressing good nutrition.

As this special week begins today, we remember a โ€œQueen of Herbsโ€ โ€“ , meaning โ€œthe plant with hundred rootsโ€ in Sanskrit. The roots of Shatavari are enriched with medicinal properties and are used in multiple Ayurvedic formulations.

On one of our trips, we came across the Shatavari plantation. The owner was kind enough to enlighten us about the importance of this herb and let us shoot. The roots were kept for drying on the lawn which would then be powdered and used as medicine with some further processing.

For centuries Shatavari is being used as a hormone balancer, emotional and physical stress reliever, menopausal symptoms manager, and overall female health booster.

Most importantly, Shatavari is known to enhance the production of milk among lactating mothers. Having Shatavari during pregnancy is said to have many benefits including an adequate supply of motherโ€™s milk for the baby, post-delivery.

Like curries, varieties of chutneys and pickles are also another mind-blowing part of Indian food culture. One such semi-dry chutney, native to the plateau region of Maharashtra is Kharda = Generous amount of garlic, and lots of green chilies are pan-roasted and coarsely pounded along with dry coconut to make this condiment. Roasted groundnuts are also added at times. Kharda when served with Bhakri, in itself can become a meal โœ…. One doesnโ€™t need any other accompaniment to go with it. We are bringing to you a village-style Chicken delicacy thatโ€™s cooked in a thick gravy made using Kharda. Best enjoyed with Jowar Bhakri ๐Ÿ’š

: The eleventh lunar day of the Hindu month's bright fortnight (Shukla Paksha) . A holy day with a special significance to Lord Vishnu. As per mythology, it is believed that Lord Vishnu goes to sleep on Sheshnag, the cosmic serpent, in the ocean of milk ( Ksheersagar) on this day and wakes up straight after four months on Kartiki Ekadashi. Hence the day is also known as (Shayan = Sleep). These 4 months are known as and many devotees observe during these four months. Abstinence from many food items like animal protein, grains, some vegetables is observed.

The famous culminates in on Ashadhi Ekadashi where all attend the Deity Poojan ceremony.

Many people keep fast on this day. Even those who donโ€™t keep fast, enjoy the , given the variety and deliciousness of this food.

The raw food that reaches us, comes after getting multiple treatments from the farmers themselves. The process of separating grains or pulses from the chaff or dirt or husk is a very common activity carried out by the farmers. A simple device made using dry grass or bamboo is used for the same. One side of the device is held on the height and the lower side gives the path for the dirt to fly away. Science of gravitational force and the wind working together does the magic.

In Maharashtrian households, plan is no less than any event ๐Ÿ˜€. is eaten in multiple forms, however, is nothing but an emotion. Even though Aamras is eaten daily in many homes through the season, pairing it with along with other condiments and accompaniments to make it into an elaborate meal is like a festivity. Friends and extended family are invited to the occasion. The meal is enjoyed over several bowls of Aamras and hot puffed Pooris. The savoury items in the Thali, complement the meal beautifully. Depending on the region, Puran Poli, Kurdai (a variety of fried crispies) find a place with Aamras in this Thali.

Rich in Vitamin C & other anti-oxidants, we were able to catch these amazing when the season is actually about to get over. Still lucky enough to relish the sweetest lot that we rarely find in bigger cities.

Did you know?: Hilly slopes of & in , produce almost 85% of the total Strawberry produced in India.

Mulching is an important practice followed in Strawberry cultivation. Polythene mulches (seen in the picture), help in retaining moisture, controlling weeds, and protect the delicate fruits from direct contact with the soil.

On our trip to , was very much on our top agenda, but what came to us as a surprise was an excellent quality freshly made . On our way to the from , we came across roadside shops that were selling this sweet, grainy, amazingly delicious Mava in two varieties. Plain and the one with dry fruits, garnished with rose petals. We couldnโ€™t stop ourselves from digging into multiple bowls of this supreme delicacy.

" ", in a novel shape was also seen in one of the parks. So along with us even they were flocking to grab a share of the food ๐Ÿ˜ƒ

Hereโ€™s the sneak peek into the making of the speciality, . The stuffing is made using jaggery, poppy seeds, roasted dry coconut, sesame seeds, cardamom and nutmeg.

Rolling with light hands and roasting on is a skill. Watching the bubbling of the inside stuffing on the pan, was our favourite pass-time as kids. ๐ŸคฃTake a look ๐Ÿ˜…

You all know the jaggery based delicacy called right? Made on day in Maharashtra. Like , GulPoli also tastes fantastic when eaten with .

But do you know the key difference? While PuranPoli is eaten with melted ghee, Non melted thick ghee is what is paired with GulPoli. ๐Ÿ˜Š. The difference mainly comes from the different textures of both these delicacies. PuranPoli is silken soft, eaten by mashing in the plate, pouring Ghee on it. ๐Ÿ˜‹. Where as, GulPoli is crisp and is eaten by breaking and dunking the piece in ghee ๐Ÿ˜Š

A day before is celebrated in most parts of India. In Maharashtra and 4 southern states, it is known as and in northern states, the day is celebrated as . This day is the first day of the 4 - day festival. The day is dedicated to Lord Indra, to seek his blessings for a good harvest.

The day marks the lighting of the bonfire and people discard the old items they don't intend to use. Also, special food is made on this day which typically involves winter produce. Most preparations make use of Winter veggies like Eggplant, Fresh Green Gram, carrot, and beans and items exuding warmth like Sesame Seeds, Jaggery, Bajra etc.

A very famous dish made using a mix of vegetables called " " is a regional specialty of Maharashtra. It is also made in some parts of southern Indian states. This extremely delicious Subzi and make a beautiful combo ๐Ÿ’•

... Always loved watching mom make these beauties. As kids, we called them either "BOATs" or "HALF MOONs". The stuffing would vary... Fresh Coconut + Jaggery, Mawa + Dry Fruit, Dry Coconut + Poppy Seeds + Dry Fruitโ€ฆ.the spicy Mutter one would announce that the winter has arrived officially.

Were enamoured observing ladies of the house make these by rolling the dough and shaping it into a Karanji. We ensured that we get at least the last couple, to try our hand at it.

Then we saw someone using moulds and got interested in that technique of making a Karanji. Clearly, it looked much easier and more convenient. However, those moulds never made their way to our house. The shape, the thickness of the cover was not as per the standards of our kitchen master chefs ๐Ÿ˜ƒ

After making multiple batches of Karanji varieties ourselves, we agree with what they taught us. We have not only mastered the art of handmade Karanjis, but we also relish those better. Each piece may look slightly different from one another, it may not be the perfect shape, like a cookie cutter variety, but they all taste the same and great. ๐Ÿ’•

The heaps of fresh are quite an attractive sight in the vegetable market in winter. Since childhood, we have seen our mothers and grandmothers eagerly waiting for this beauty to arrive in the market. The moment it appeared, all of them would flock around the Subziwala. And the news of Fresh arriving in the market would spread faster than the rumor. ๐Ÿ™‚ And that too along with the rate negotiated by one of the aunties. ๐Ÿ˜ƒ. And then used to begin what we called " Saptah" as so many interesting delicacies were made using it. The most coveted one of course was " ". Rounds of Fresh Peas were bought through the season till it lasted. Multiple rounds of this delicacy also would take birth in the kitchen. Neighbors used to get invited to each other's houses to relish one.
