Noi lo abbiamo valorizzato così, in una posta ripiena dal condimento semplice, all'aglio e olio.

In Tuscany, Cacciucco is a dish disputed between two cities. Some say it is the evolution of the 'brodetto' brought by the 'traboccolari' who came from the Adriatic.

Così come in Autunno inizia la stagione del vino vendemmiato e messo a riposare nel suo controllato fermento. Per questo abbiamo deciso di accompagnare il tramonto su Firenze, con un aperitivo che celebri l'ingresso di questa stagione.

Quando abbiamo preparato questo piatto ci siamo divertiti un sacco.
Mancava sempre qualcosa e nessuno riusciva a trovare la chiusura giusta. L'animella di vitello cotta ai carboni, con un po' di fiamma, le carote in carpione e poi?
Poi è arrivata una voce da lontano che ha detto "ma il cardamomo?"
E niente, aveva ragione, il cardamomo è il finale perfetto di questo secondo.

When we prepared this dish, we had a lot of fun. Something was always missing, and no one could find the right finishing touch. The veal sweetbread cooked over coals, with a bit of flame, the pickled carrots, and then? Then a voice came from afar and said, "But what about the cardamom?"
And that was it, they were right, cardamom is the perfect final touch for this main course.

Chi è il conte Negroni?
Ebbene sì, il conte è esistito davvero, vissuto fra gli Stati Uniti e Firenze, dove è nato nel 1868 ed è tornato dopo l’esilio americano nel 1912, per morire nel 1934.
Negroni è stato cowboy, maestro di scherma, giocatore d’azzardo e frequentatore tanto di salotti, quanto di bar di ogni tipo, dal Grand Hotel alla Drogheria Casoni. Ed è proprio in quest’ultimo che la leggenda racconta che il conte abbia dettato a Fosco Scarselli, il suo barista di fiducia, in un giorno imprecisato fra 1917 e 1920, la ricetta del Negroni: un terzo di vermouth rosso, un terzo di bitter e un terzo di gin.*

Ancora oggi, sopra Firenze, il Negroni continua la sua storia di protagonista indiscusso.

Who is Count Negroni?
Yes, the Count really did exist. He lived between the United States and Florence, where he was born in 1868 and returned after his American exile in 1912, passing away in 1934.
Negroni was a cowboy, fencing master, gambler, and a frequenter of both high society salons and all kinds of bars, from the Grand Hotel to Drogheria Casoni. It is in the latter that legend has it, the Count dictated the recipe for the Negroni to his trusted bartender, Fosco Scarselli, on an unspecified day between 1917 and 1920: one-third red vermouth, one-third bitter, and one-third gin.*

Even today, above Florence, the Negroni continues its story as an undisputed protagonist.
