The Jerry Thomas project doesn’t need any introduction, it is the first and most important speakeasy in Italy.
Simone Onorati, who grew up in the world of hospitality, joined the project and later became the general manager.

Yuki Yamazaki is the founder of The Japanese bitters, bitters that come exclusively from native plants of Japan, such as the cherry tree and the delicacy of its flowers, the shiso, Hinoki, the Japanese cypress, the yuzu, then incorporating umami, the distinctive element of Japanese cuisine that adds depth and complexity to the drink

The Gimlet can be considered one of the most classic cocktails.
It has a timeless elegance and great simplicity in the ingredients: Gin and a homemade citrus cordial from , with lemon, lime and grapefruit.

The birth of this drink in the 19th century has a very curious history.
In fact, legend tells of a doctor who, to give sailors pure lime juice that would heal them, masked it with gin to cover its bitter taste.

Over time, a much more refined citrus cordial has made it one of the most appreciated cocktails.
