Sapete cos'è il briki e a cosa serve?
Il caffè greco è conosciuto per il suo aroma molto intenso, dovuto al metodo di preparazione, che consiste nella bollitura all’interno di un bricco in ottone, detto “briki”.
La fase dell'ebollizione è cruciale: il fuoco deve essere dolce per creare la schiuma "kaimaki" che, insieme al caffè, deve raggiungere il bordo del "briki". Dopo aver spento il fuoco, si attende qualche minuto finché le polveri del caffè si depositano sul fondo. A differenza degli italiani, i greci riempiono le tazzine fino al bordo, non mescolano mai il caffè e lo gustano lentamente. La cerimonia prevede di servire il caffè con biscotti e un bicchiere d'acqua.

Do you know what briki is and what it is used for?
Greek coffee is known for its very intense aroma due to the method of preparation, which involves boiling it inside a brass pot, called a "briki."
The boiling stage is crucial: the fire must be gentle to create the "kaimaki" foam, which, together with the coffee, must reach the rim of the "briki." After turning off the fire, one waits a few minutes until the coffee powders settle to the bottom. Unlike the Italians, the Greeks fill the cups to the rim, never stir the coffee and enjoy it slowly. The ceremony involves serving the coffee with cookies and a glass of water.
