Some believe that traditions must be preserved intact, so that future generations do not forget their origin and keep their identity. However, traditions are not always meant to remain exclusive for their original country; they can be shared amongst other cultures to facilitate their continuance.

With this in mind, Chef Yusuke Kogure emigrated from his native Japan, at age 17 in search of his own identity. It was while sailing the high seas on a fishing vessel when he discovered his future passion: gastronomy. After years of practice in some of the best restaurants in the world, Yusuke has managed to create his purist cuisine style. Today, he crafts refined original recipes, always honoring traditional Japanese cuisine, by carefully picking the best from the wide variety of delicious Mexican seafood and unique local ingredients.

Chef Yusuke perfectly understands that the culture in which we grow defines our self vision and that of the world around us. Traditions keep us in touch with our ancestors and allow us a sense of belonging, shaping our identity. This is how Chef Yusuke Kogure has defined a signature cuisine that he has successfully presented in various restaurants around the world and mainly in Mexico.

It is no secret that Japanese cuisine is known as one of the bests in the world as well as one of the healthiest, most varied and delicious. But it is also full of strict rules and methods, just as the Japanese culture itself, somewhat reluctant to changes and variations. Instead of seeing as an obstacle, those features have become Yusuke's purist style greatest strength.
