I started with this recipe & quite successful with my 1st sourdough bread.
Room temperature 28°c-30°c
30g bread flour
30g water
30g starter
Feeding - 4 hrs (rise to peak)

500g. Bread flour
350g. Water
50g. Levain
10g. Salt
Method:
- Autolyse - Mix flour & water (cover & rest 1 hr)
- Add starter (cover & rest 30 mins)
- Add salt (cover & rest 30 mins)
1. 2 sets Stretch & Fold (cover & rest 30 mins)
2. Lamination (30 mins) for practice
3. 4 sets Stretch & Fold (30 mins intervals)
Total bulk fermentation is 4-4.5 hrs .
5.Shape & Tension pull.
Dust some rice flour in the banneton basket, gently place the dough ball in it,
Cover with shower cap.
1. Cold re**rd in refrigerator 14 hrs
2. Preheat oven & Dutch oven 250°C for 1 hr
3. Bake 250°C for 40mins (w/lid)
4. 230°c 15mins (w/o lid)
