📝记录起来蛋糕失败的原因

1️⃣问题一：表面开裂
原因：
开裂的深层原因归根到底是：水分缺失，表面变
得干燥就会开裂
导致水分缺失的原因有以下几点：
❌温度过高
❌蛋黄糊液体比例过少
❌蛋白打发过度
❌面糊倒的太多
对应解决办法
⭕️降低炉温，延长烘烤时间
⭕️找靠谱的配方
⭕️做戚风的蛋白打发成鸡尾状
回倒7~8分满，多余的用纸杯装
2️⃣问题二：表面凹陷回缩
原因
❌没烤熟
❌蛋白消泡
❌没倒扣，导致表面蓬松，底部厚实
❌面糊搅拌过度，起筋
对应解决办法
⭕️出炉前几分钟，检查是否烤熟
⭕️打发稳定的蛋白霜
⭕️出炉震一下排气，倒扣
⭕️蛋黄糊和面粉混合时，不要过度搅拌
3️⃣问题三：底部凹陷，离模
原因
❌底火太高
❌烘烤前震动用力过大
❌蛋黄糊没乳化好，油粘附在模具上，造成离模
对应解决办法
⭕️降低底火
⭕️震动1~2下就好了，明显气泡可用牙签戳破
⭕️乳化好蛋黄糊，不要造成油和液体分离
4️⃣问题四：出炉后蛋糕侧面缩腰
原因
❌没有完全冷却就脱模
❌没有倒扣
❌蛋白消泡，面糊搅拌过度，起筋
对应解决決办法
⭕️完全凉透再脱模
⭕️打发稳定的蛋白霜，分三次加糖
出炉震一下然后倒扣。蛋黄糊和面粉混合时，不要过度搅拌
5️⃣问题五：组织不细腻，粗糙，口感不好，有大粗孔．口感粘牙
原因
❌配方是否正确
❌蛋白是否打发好
对应解决方法
⭕️检查配方的量是否正确
⭕️打发好蛋白
6️⃣问题六：长不高
原因
❌配方是否正确
❌蛋白是否打发好是蛋糕膨帐的重要点
对应解决方法：
⭕️检杳配方的量是否正确
⭕️打发好蛋白
7️⃣问题七：出现分层
原因：
❌蛋白没打发好
❌蛋黄糊和面糊的翻拌手法不对，导致消泡
对应解决办法：
⭕️打发稳定的蛋白霜
⭕️注意翻拌手法
