The malva nut or 胖大海 (“fat big ocean”), an imaginative description of how the nut swells 10x its original size when soaked with hot water, is used to make herbal drinks and tong sui. The swollen seed, size of an almond, becomes gelatinous in texture and is fun to eat! 胖大海 are available in Chinese medicine shops and are easy to prepare. Get the good quality nuts (there are different grades) from TCM shops, wash and soak in boiling water. Add some brown sugar to taste. Next time you have a sore throat, congested lungs and ‘heaty’ body, have a glass of 胖大海 at Zoooli!

Special jelly mooncakes for Zoooli’s diners this Mid Autumn Festival, Friday 29th September! Refreshing, low sugar and fruity, these mooncakes are the perfect after-meal dessert!

Sichuan peppercorns are called “hua jiao” in Chinese, meaning flowering peppers, referring to the way the peppercorns open when dried. Besides the strong citrusy peppery scent, Sichuan peps give a thrill of fizziness and tingling numbness to the lips and even the throat (which can cause panic), elevating your eating experience!

Green Sichuan peps are a different variety from the red. They pack a stronger flavour and numbness than the red too. Good quality Sichuan peps have such an intense smell that I could even smell them after triple bagging and being stored in my suitcase on a recent trip from Chengdu. That’s a sign that the peppercorns are fresh and of high quality!
