With its unique texture and nutty, slightly bitter, and astringent notes, the banana flower has always been a staple in South Indian and Sri Lankan cuisine. One of our favourite dishes, the Hearts of Hearts, celebrates this traditional ingredient alongside the fruit and delicate stem of the banana plant.

Pigeon from France, meticulously aged for 48 hours and cooked on the crown to perfection. A delightful Apricot Pickle from Kerala, artfully chosen to complement the gaminess of the pigeon, adding a burst of tangy sweetness with every bite. On the side, the sublime flavours of Beetroot baked in a salt crust for three hours. And marrying the elements, a light Truffle Jus with delicate shavings of Italian Black Truffles to elevate the dish.
