Did you know? "Dodging extraction," a technique that involves separating wine from its orchids and allowing Syrah to get an oxygen intake.

After carefully removing the duzil (the cap located on the face of the barrel), our caveman placed a tap for the wine to flow. Once in place, the tram cap is removed (cap located above the barrel) so the wine can flow. The wine is then stored in a cask while the keg is cleaned to remove the leaks. Once the operation is completed, the wine is re-milled and the farming continues.

"Beautiful, dark, garnet-red colour. The nose is rather closed at this time. However, after a few minutes in the glass it opens up to reveal a rich, complex bouquet of red and black fruit reflecting grapes picked at just the right moment. 2015 Quintus is smooth, even creamy, on the palate, with a tight-knit tannic structure. This tannin is immediately perceptible, but in no way aggressive. The middle palate is full-bodied, and the finish is delicious and fairly long. This powerful, tasty wine is also very elegant."

Fun Fact: Château Quintus is the 5th child within the Domaine Clarence Dillon family of wines. Its name is a tribute to the Gallo-Romans, creators of Saint-Emilion’s vineyards, who had the custom of naming their fifth child Quintus.

The early history of Château Léoville Las-Cases is intertwined with the Léoville estate- which was split after to the death of its owner Alexandre de Gascq and with the impending French Revolution. His son, Pierre Jean de Lascases inherited part of the Léoville estate in 1840 and gave it his name.
