Quesadilla de chorizo ibérico.
We source the nicest ibérico chorizo from Salamanca in Spain and marinate it with a mix of al pastor spices (like cumin, achiote and orange juice). Then we mix in our Oaxaca style cheese and place it between two heirloom blue corn tortillas from . Finally, a little heat the plancha and our homemade jiltomate tatemado sauce do the rest…

Liberation Day in The Netherlands today. Cinco de Mayo in México. None of the two is Independence Day but they are both a great excuse to enjoy a couple of margaritas and hoover up some tacos and quesadillas. Like this one, it’s from our new menu and it’s very popular: ibérico chorizo al pastor and oaxaca cheese. Decadent and satisfying!

Nopales are (almost) impossible to get fresh in the Netherlands. We got these from Spain. Their season is short (4 weeks) and production really small, so we cannot be happier to be able to bring you this tonight.
Our personal homage to …Nopal ceviche with beetroot, samphire, begonia flowers and smoked celery leche de tigre … limited quantities!

We are very excited to share with you that we managed to get a couple of kilos of fresh nopales.
We will be using them as a special this week.
