We serve only 8 guests per evening with our best ‘omotenashi’.
Omotenashi is Japanese hospitality. “Omote” means public face – an image you wish to present to outsiders. “Nashi” means nothing. Combining them means every service is from the bottom of the heart – honest, no hiding, no pretending.
The spirit has its root in tea ceremony where tea masters face the audiences and make tea in front of them. Everything is open and clear. “Imomochi” (potato mochi) is a home dish in Hokkaido. Besides Hokkaido. “Imomochi” is said to have originated in the early days of rice farming, when rice cakes were made using potatoes that were abundantly available at the time, instead of glutinous rice. During the pioneer days of the Meiji period (1868 - 1912), "Imomochi" was valued by the pioneers as a valuable source of protein. Because of its ease of preparation, it became a popular dish among the people. It was eaten during and after the war, when food was scarce, and is now a staple snack in Hokkaido. One of our signature amuses is a potato ball with Rotterdam old cheese inside and a Gouda cheese ring around it. It was inspired by Chef Yama’s home dish in Hokkaido. 😋 (the 2nd and the 3ed photos are the sample image for imomochi)
Tsukubai is a washbasin located at the entrance to a sacred location where visitors can cleanse themselves by washing their hands and rinsing their mouth. This form of ritual cleaning is customary for visitors to Buddhist temples or tea ceremonies. A tsukubai is also common in Japanese gardens. Did you know there is also one in our lovely Japanese garden? In the main course Chef Yama built a Japanese rock garden as well as a mini tsukubai! 😍
The Shigaraki-yaki tanuki in the middle was brought by Yuko's sister all the way from Japan this summer to congratulate our Michelin star!
Shigaraki town is located in the south part of Shiga Prefecture (next to Kyoto). The town is famous for its ceramic kilns since ancient times, and the ceramic works are called Shigaraki-yaki (Shigaraki ware). Tea ceremony had developed in Kyoto since the 15th century, so tea utensils were produced in Shigaraki. When Emperor Showa visited Shigaraki in 1951, hundreds of raccoon dogs (tanuki) of Shigaraki ware holding Japanese flags were lining up on the side of the road to express the welcome. Later, Emperor Showa wrote a poem to give an impression of viewing them. By the news, tanuki of Shigaraki-yaki has become well-known throughout Japan. Now, it is the symbol of Shigaraki-yaki. Tanuki means a raccoon in English and also implies “TA = others” “NUKI = surpass”. Therefore, people who run a business are willing to place this imaginary animal at the entrance to get lucky.🤗
