It is important to prevent contamination of your gluten-free and gluten-containing foods. Here are some tips to reduce the chance of contamination in your household:
- Always use clean food preparation areas, appliances, boards, utensils and hands i.e. washed with warm soapy water or wiped clean of crumbs or flour dust.
- Always use fresh water and clean oil for cooking gluten-free food. Gluten does not dissolve at high temperatures.
- Store gluten-free and gluten-containing food separately and label clearly, especially after being removed from its original packaging.
- Have dedicated butter and spreads and label them clearly as GF only!
- Clean your shared toaster or sandwich press regularly to reduce cross-contact risk. A separate toaster may be preferred. Toastabags are also available from the Coeliac New Zealand website coeliac.org.nz
- For PHARMACEUTICALS examine the packaging of over-the-counter medications and check the Consumer Medicines Information (CMI) leaflet of prescription medication. If there is no mention of gluten, then the medication is suitable. Talk to a pharmacist or health professional if you are concerned.

Dr Tina Nahyeon Baik BPharm MBCHB - Dr. Tina is a Research Doctor at Optimal Clinical Trials with a Bachelor of Pharmacy from the University of Otago and a Bachelor of Medicine and Surgery from the University of Auckland. She has over ten years of experience in the acute hospital setting as a Senior Registered Medical Officer in Auckland, covering all medical specialities including Cardiology, Respiratory, Transplant, Gastroenterology, and Gerontology. She has a particular interest in Coeliac Disease and Obesity and has tutored medical students in clinical skills and communication. In her free time, she enjoys running, music, and spending time with family and friends.

Developed by Associate Professor and Clinical Psychologist Simon Knowles, this free, evidence-based 5-week program offers valuable support tailored to the needs of those with coeliac disease.
The two-way relationship between the brain and the gastrointestinal tract (i.e. gut-brain axis) is well established, whereby changes in the gut impact psychological well-being and vice versa. Coeliac disease can cause the composition of microorganisms in the gut (i.e. gut microbiome) to become unbalanced (i.e., dysbiosis). Dysbiosis of the gut microbiome has been linked to mental health issues such as depression, which itself is associated with poorer health management, both generally and in coeliac disease specifically (e.g. poorer adherence to the gluten-free diet).
This is the last chance to contribute to the health survey in 2024, which closes on the 16th of July.
It is important that as many people as possible, living with coeliac disease contribute to this data so that an accurate assessment of the needs of all New Zealanders with the condition and their families are included. Have your say today!

You or any family members with diagnosed or suspected coeliac disease are invited to complete the 15-20 minute survey asking New Zealanders about their health and well-being. You can complete the survey for yourself if you have coeliac disease, or on behalf of a child with coeliac disease, but we would like a separate survey completed for each person in your household that has coeliac disease. The study is being run by researchers at Otago University (HD24/023).

With the start of the school holidays, you may find time to try this recipe developed by our Food Ambassador Buffy Ellen Gill in the 2024 CNZ Calendar.
GF Zucchini and Herb Fritters
INGREDIENTS
1 onion
3 cloves garlic
2 ½ cup zucchini grated and packed
(3 zucchini)
1 cup chickpea flour (ie:Try Freshlife, available in the supermarket)
1 cup water
¾ tsp sea salt
2 tbsp coconut oil
3 tbsp chopped fresh herbs thyme,
oregano, parsley, chives, rosemary
Salt and pepper to taste
METHOD
1. Chop the onion and garlic. Saute for 3 minutes in 1 tablespoon coconut oil.
2. Mix in a bowl with the zucchini, chickpea flour, herbs, salt and water.
3. Pan fry 1/4 c scoops in the remaining coconut oil over a medium heat until the edges start to dry out (around 3 minutes), then flip and cook on the other side. Make sure the heat is not too high or your fritters will burn.
4. Place on a plate in a 50°C oven to keep them warm while you cook the remainder.
5. Serve with vegan aioli, relish, avocado, and tomatoes. Add salt and pepper to taste.
TIPS
Here are some of my other favourite toppings for these fritters: guacamole, creamy cashew aioli, tahini, relish/chutney, sunflower, sesame and pumpkin seeds.

Thanks to our dedicated team of staff who work hard to deliver against the key priorities of the organisation. This photo was taken at our 50th anniversary AGM on Saturday 22 June 2024. From left to right: Suzanne Aitken joined the team last year as our dietary education manager and has been working towards getting more consistency for safer eating options outside the home and providing valuable dietetic input to the organisation. Fred Tan our administration and membership manager is the glue that holds us all together, he manages all the administration and membership functions of the organisation, and is often the person you talk to as members. Me, Wendy Bremner General Manager, next to Fred and then Dana Alexander our Sales and Marketing manager who has been on staff the longest and has worked tirelessly this year building on the strong stakeholder relationships she has developed to ensure we have had excellent support for the conference and awareness campaigns as well as building trust and industry credibility of our crossed grain logo. On the right Karina Ledwos recently taking over the mantel from Lisa in the Health Promotion Manager role and she will work closely with our volunteers to raise awareness about coeliac disease.

Coeliac disease is a genetic condition, but not everyone who has a coeliac gene will get coeliac disease; environmental factors and other genes also play a role in the development of the condition. Why coeliac disease is ‘triggered’ in only some people who carry a coeliac gene is not known. Because of the genetic basis of coeliac disease, first-degree relatives (parents, brothers, sisters or children) of a person with coeliac disease have a 10% chance of also having coeliac disease.

GF WRAPS
I’m celebrating Coeliac Awareness Week with these homemade GF wraps, made using Freshlife Chickpea Flour. They’re super simple to make and can be used to make tacos, wraps, stuffed savoury crepes and more.
Makes 6 wraps
2 tsp cumin seeds
1 cup FreshLife chickpea flour
1 cup water
1 tablespoon oil
½ tsp sea salt
Oil to grease pan
Toast the cumin seeds in a pan, without oil, until they’re fragrant – about 1 minute on medium.
In a bowl mix all the ingredients and whisk to a smooth batter. Leave to sit for 30 minutes or until thickened.
Brush a pan lightly with oil and heat to medium. Pour enough batter (about ¼ cup) into the pan and swirl it to spread the batter out in a large thin circle. Cook for 2-3 minutes or until the edges start to lift. Flip and cook for 1-2 minutes more. Repeat with the remaining batter.

Tauranga’s Grace Hospital has become the fourth private hospital in New Zealand to become accredited with the Dining Out Programme. https://www.gracehospital.co.nz/
The surgical hospital was awarded its accreditation in April following a patient survey that identified a need for patients with coeliac disease to feel confident when eating gluten-free food provided by the hospital.

Salad
2 cups cooked quinoa (2/3 cup dried quinoa)
2 cups cooked shredded or diced chicken
1 red capsicum diced
1 small red onion diced
1 cup diced cucumber
1 cup quartered cherry tomatoes or diced tomatoes
1 can of corn kernels rinsed & drained
1 can of black beans rinsed & drained
1/4 packed cup chopped fresh coriander
Mexican Lime Dressing
juice of 3 limes (about 1/4 cup)
1 clove garlic crushed
1/4 teaspoon salt
3 tablespoons extra virgin olive oil
2 teaspoons Mexican spice
Instructions
1. Prepare the dressing by adding ingredients to a jar and shaking or whisking in a small bowl.
2. Place all of the salad ingredients in a large bowl and toss to combine. Pour the dressing over top and mix through the salad ingredients.
3. Serve as a salad with any leftover lime wedges. Serve as a salad with any leftover lime wedges. This salad is extra delicious with a dollop of sour cream, guacamole and tortilla chips. Alternatively, use it as the filling in a soft corn tortilla wrap.
