Faster beef finishing the wave of the future Dairy-cross another key trend, says founder of Speckle Beef supplier Neat Meat.
The scotch fillet sits between the chuck and the striploin (sirloin) muscles over the back. It is a very tender, moist and flavourful cut of beef. Savannah Scotch Steaks are thick, juicy and delicious.
What you’ll want to look for in the perfect scotch:
VISIBLE MARBLING ✅
The white parts running through the steak are the fat, also known as marbling. Scotch marbling provides tenderness and delicious flavour as the marbling melts with heat.
NATURAL RED COLOUR ✅
Natural red colours are signs of freshly cut and well-handled meat. This shows the meat comes from a healthy, well-fed, and properly aged animal. Our Savannah Scotch is 100% grass-fed NZ Beef so you know you’re getting the very best.
THICKNESS ✅
Looking for thickness in your steak will help you cook it to perfection whilst adding tenderness and flavour. Searing on a high heat on both sides, it will allow the steak to remain pink and juicy on the inside.

Chef W***y shows us how to cook sirloin to perfection. Here’s how to nail it.
🥩 Preheat your oven to 180 degrees.
🥩 Start off with bringing the steak to room temperature and seasoning with quality oil, salt and pepper.
🥩 Heat your pan, add oil, then place the sirloin in the pan.
🥩 Cook for one minute on each side and add some butter, garlic and herbs of your choice.
🥩 Cook for 10 minutes in the oven on 180 degrees.
🥩 Remove from the oven and let it rest for eight minutes before serving.

What you'll want to look for when buying premium pork mince:

Free-range means no barns, cages or concrete floors. Free-range pork are raised in fresh air, sunlight and lush open fields. Free-range is superior to free-farmed, where animals are raised in barns.

The white flecks of fat, also known as visible marbling, provides tenderness and flavour as the fat melts when cooking and distributes throughout the meat.
Back to work and in need of quick mid-week dinner ideas? Spag Bol is considered a classic winter dish, do you want to know how to make it a summer meal? Eat it outside and make the most of these long summer evenings!
All you’ll need is:
🍝 A couple of cloves of garlic
🍝 1 large onion
🍝 400g Harmony Beef Mince
🍝 400g of dried spaghetti
🍝 2 x cans of chopped tomatoes
🍝 100ml red wine (optional, or a splash of balsamic works too)
🍝 Parmesan to serve
Heat a couple of tablespoons of oil in a pan on medium-high heat and finely chop the garlic and onions. Add the garlic and onion to the pan and cook until softened, stirring occasionally. Bring a pot of water to the boil.
Add the beef mince to the pan and break up with a spoon, when it is starting to brown, add the wine if using. Add the tomatoes to the pan and leave to simmer.
Cook the spaghetti pasta in the boiling water until al dente. Once the spaghetti is cooked, drain the pasta. Serve the spaghetti with spoonfuls of the bolognese on top and add grated parmesan to taste 🤌

🔥 Our Harmony patties are already seasoned and ready to cook. Whilst they’re cooking, try brushing the patties with butter, this will make them extra caramelised
🔥 Don’t over flip your patties when cooking, the more you flip them the more they’ll break
🔥 Whilst the burger patty is still cooking but nearly finished, pop a slice of cheese on top and cover to get that ultimate melt
🔥 Let your patties rest before serving, this will allow the juices to redistribute and tenderise the meat
🔥 Toast your burger buns. Not only does this add flavour, it will stop the whole burger from going soggy

Cut from the short loin, with a fine grain and ribbon of fat along one side, this beef is raised in open pastures by a community of Taupō Beef farmers who meet Harmony’s strict environmental and animal welfare criteria.
Best served medium rare, to prepare simply season with good quality salt and pepper and cook in a pre-heated, greased pan over a medium-high heat, turning once. Rest the sirloin for a couple of minutes before serving.
