**Why did you choose to specialize in desserts?**
-In pursuit of culinary creativity akin to the sweetness of chocolate and pastry, my journey into the realm of desserts stems from a genuine passion for crafting delectable treats. As the first in my family to tread the path of a chef, I am driven by a desire to establish a culinary legacy, channeling my interests into a lasting contribution.
**What can guests anticipate from your dessert creations?**
-I elevate familiar desserts, such as the classic brownie, by infusing my unique touch to evoke awe-inspiring moments. The emphasis lies not only on exquisite flavor but also on impeccable presentation, ensuring a delightful and impressive experience for customers.
**How do you keep up with culinary trends, and how do they influence your menu choices?**
-During my leisure time, I immerse myself in culinary videos, drawing inspiration to experiment with ingredients and create innovative confections. Incorporating foraging techniques, including garnishing with edible flowers, further enriches my repertoire and aligns with contemporary culinary trends.
**Could you share a memorable moment from your culinary journey?**
-Six years ago, I experimented with new ingredients and methods, resulting in a remarkable brownie that recently resurfaced during menu development. Tasked with creating a dessert reflecting New Zealand's beauty, this brownie, accompanied by a stunning tree trunk presentation, became a popular highlight—a testament to the enduring wow factor of culinary innovation.
**What are your aspirations for your career as a dessert chef, and how do you plan to continually evolve and push boundaries in your craft?**
-In the future, I aim to grow ‘K Kitchen and Bar’ by showcasing our desserts globally through vlogging and social media. By expanding our reach, I hope to elevate the restaurant's reputation and contribute to its lasting legacy in the culinary world.

**A:** The Paritua Forbidden Rice Risotto is a masterpiece. Departing from Arborio rice, we opted for forbidden rice during menu development, adding a local wine, Paritua, for nuanced depth. The confit-style duck from local suppliers contributes to its unique flavor.
**3. Culinary Alchemy with Local and Seasonal Ingredients**

**A:** Incorporating Kawakawa and lovage isn't just a choice; it's a commitment to sustainability. Kawakawa adds a New Zealand touch with peppery notes. Lovage brings herbal freshness, connecting our menu to nature's bounty.
