Heartwood tells the story of two unique terroirs. The first is the terroir of the forest where our oak trees are grown—trees that are 150 years old when harvested from the Troncais Forest, just south of Paris. After being carefully selected, the wood undergoes a rigorous seasoning process that lasts between 3 to 5 years. Each barrel is then handcrafted and shipped halfway across the world to New Zealand.

The second terroir lies in the vineyards of Hawke's Bay, where the grapes for Heartwood are grown. This Chardonnay is a blend of two esteemed local vineyards, Two Terraces and Kokako Farms. These vineyards are rooted in free-draining limestone soils overlying alluvial grey and red metal sub-soils, which impart an incredible intensity and complexity to the fruit, resulting in a Chardonnay with a distinctive and rich profile.

This is ideal for Chardonnay production as it maximizes the contact between the lees and the wine, resulting in textured and bold wines without the heavy oak integration that many people find off-putting about Chardonnay.

One decade ago, Tony Bish Wines began an exciting journey with our first vintage, releasing the iconic Fat & Sassy, our most popular Chardonnay, and the Summertime Chardonnay.

We’re thrilled to announce the release of our 10th vintage of Fat & Sassy! This year’s blend is a unique combination of Marlborough and Hawkes Bay fruit, thanks to the generosity of Marlborough growers after Cyclone Gabrielle. Available online and in stores now!

2023 Fat & Sassy Tasting Note:
Aroma: Exotic with grilled peach, nectarine, nashi pear, and tropical fruits, accented by white flowers and oak spices.
Palate: Full and richly layered with mouth-filling flavours of ripe stone fruit, red apple, and sweet mandarin. Enjoy lovely spicy nuances, sassy freshness on the finish, and lingering nutty oak complexity.

Our FAWC Event: The Evolution of Tony Bish Wines.

For the first time, we delved into the depths of our chardonnay collection with a vertical tasting with customers. Together, we explored four vintages of Golden Egg, Heartwood, Skeetfield, and Zen side by side. Each imbued with its own unique character shaped by the nuances of their respective vintage conditions.

Guided by Tony, we journeyed through time, understanding the interplay between terroir, climate, and craftsmanship that gives each vintage its remarkable identity.

Just like that my 43rd Vintage is being wrapped up, all the beautiful Chardonnay fruit has been carefully picked and has begun fermenting at The Urban Winery.

It's a satisfying moment for our team, knowing that the culmination of our efforts will soon be enjoyed by wine enthusiasts all around the world. Let's celebrate with a bottle of Champagne!

Vintage 2024 is shaping up to be an absolute banger!

Introducing the newest members to our barrel family - The 1200L Oak Ovoids by Taransaud!

The unique charm of these vats lies in the intriguing realm of lees contact. Lees, remnants of grape skins, seeds, and yeast cells settle to the bottom of a traditional barrel during fermentation. The innovative egg shape ensures continuous lees contact with the wine, producing finished wines with incredible flavour and texture.

Visit The Urban Winery to see these new gems in person, but hurry! Once our barrels are stacked, these little guys might play hide-and-seek.

All of our premium blocks will be ready simultaneously, so we are making a call out for volunteers to help us hand-pick our Chardonnay!
