The dinner begins with an appetizer of Iberico Ham and Rock Melon, drizzled with a captivating Tawny Port Wine Sauce, setting the stage for a symphony of flavors. Followed by the second starter, a Pan Baked Escargot on a Portobello Mushroom, gratinated with a mouthwatering Garlic Butter Sauce.

Chef Jeremy, who brings over 30 years of experience in the F&B industries to Wai Exclusive.

Most recently, Chef Jeremy owned and operated the acclaimed Vis-à-vis French Restaurant. Prior to this entrepreneurial venture, he honed his culinary skills under the tutelage of renowned French Chef de Cuisine Francis Carcel at the prestigious Culinary Institute of Toulouse in France.

Building upon his classical training, Chef Jeremy went on to open several critically acclaimed French dining establishments, including Saxophone Wine Bar & Restaurant (1986), Casablanca Wine Bar & Restaurant (1987), La Grande Bouffe French Restaurant (1989), and his flagship Vis-à-vis French Restaurant (1992).

In addition to his success as a restaurant owner and operator, Chef Jeremy also served as a consultant for the J.W. Marriott in Surabaya, Indonesia for seven years. During this time, he also acted as an ambassador for the premium kitchen appliance brand, De Dietrich.

At the heart of Chef Jeremy's culinary approach is a steadfast commitment to utilizing only the freshest, highest-quality ingredients, which he expertly combines with an intriguing array of global flavors.
