Like pairing this opulently floral & tropical Sancerre by Vincent Pinard with our Tempura & grilled fish from the streams of J*pan.
Above the glades of Boat Quay.
It's not nice to stare.

Turban Shells サザエ. From Niigata, facing the West J*pan Sea.
Sit them over hot coals to bubble in its own juice & sake, 壷焼き.
I can be easily pleased.
When it rains, drink sugarcane.

New shochu in the house.

Celebrate F1 SG! Back a Dark Horse with James Gin crafted by the "Captain Slow", James May, ex-TopGear Host.
Comes in 2 recipes, Asian Parsnip & American Mustard. Smother it with tonic or tarnished with a slander of vermouth. Good enough, for as May would say, "all you infantile pillocks."
$ 16 G&T / $ 22 Martini
ONLY at Dark Horse
からすみ入りトマトの酒漬け, Marinated Tomatoes with Bottarga.

New sake has arrived. Good view all the time.
Ryusuisen 龍水泉, a Jumai Jinjo by brewer 市野屋 hails from the northern alps of Nagano. The hard water from the underground springs shows in the sake of superb minerality, true to its terroir.
Beautiful bouquet of grapes & pears welcomes the palate of wine like quality in this sake.
Light in alcohol, perfect for drinking before sundown. Indeed, drinks like a Pinot Blanc from the Alsace.
Bottarga with yams. からすみと山芋.

Special menu with bottarga. This bottarga is dried aged grey mullet roe from Taiwan.

Dark Horse Sling. How about that?

Whisk me back to the Kamo River, from above the glades of Boat Quay.

Starting a rotating wine list, 3 at a time with Grower's Champagne. Perfect for celebrating SG58! Pairs superbly well with white fish Sashimi, Tempura and Chicken Karage.
Something old. Perhaps as old as this shophouse.
Starting afresh with champagne! Grower's Champagne differs from House Champagne, in that they grow the grapes that are put into their wine.
Whereas House Champagne abides strictly by their style, Grower's Champagne exhibits the quality of their climat & terroir, making the drinking all the more exhilarating.
Enjoy!
