At the same time, such a heartwarming group photo with ex-employees who are still a big part of our life, as well as 5 consecutive batches of pastry trainees(past and present).

I can’t say we have the best method to cultivate them, but we must be somehow correct.

A great pleasure to be back to for homecoming and to share with the culinary and pastry students about Bonheur Patisserie’s fourteen years journey. I ended the sharing session with a powerful message quoted from Mike Tyson.

“Discipline is doing what you hate to do, but do it like you love it.”

A core value I demand from myself and my team every single time we are in the kitchen and this contributed tremendously to our longevity in this cut-throat world of F&B.

I hope we inspired a few today and this quote can stay with them for the rest of their cheffing career. With that, the grinding continues!

After more than 3.5yrs, yesterday was my last day at Spazio@Kovan. I had wonderful memories of Pasarbella @ The Grandstand whereby it was a concept market never seen in Singapore before and definitely Raffles City which I’m sure till now is still one of the most sought-after malls in Singapore.

But looking back at the past 3.5yrs, I have no doubt my time at Spazio@Kovan is the most memorable period throughout my 13 years as Chef Owner. It was a transition from the busiest -72 to the almost zero sales -04. There was this instance, not long after we shifted to Spazio@Kovan, where an existing customer from Raffles City came by to collect her order and she said, “You are going to lose a lot of customers moving to a place like this”. It was unpleasant and at that moment we had to agree.

Soon, COVID-19 came and having only focus on retail sales for the past 10years, very little was done on our online presence. We panicked and had to figure out how to sell on social media to make sure we stay afloat.

We tide it through and in fact engaged much more customers than we could have imagined. Many say it was a blessing in disguise with the lease up at Raffles City and the slight delay at Wisma Atria which landed us in Spazio@Kovan. Otherwise we might not even be around today.

So, thank you Spazio@Kovan -04 for the being our haven and now it’s about time for us to set sail again.

The “Botanical” Box.

At Bonheur Patisserie, we are constantly trying to pack flavours into a French Macaron without compromising the integrity of how a French Macaron should be like. So much so that fatcarons are almost a joke to us and I still stand firm on not accepting any fatcaron request from customers.

With combinations of flowers, fruits, herbs, seeds and spices. We hope to create unique and complex flavours which should feels and tastes natural. Half of the box required infusion of flavours into core ingredients and the other half of the box required us to breakdown ingredients into fine powder form before using them. Making the “Botanical” Box; THE most tedious theme box we ever made. Suppliers out there who are always asking me to give their extensive list of artificial flavourings a try but only for me to “No, Thank you.” must be saying 自討苦吃 inside their head right now.

To sum it up, give this “Botanical” Box a try and you will know how much effort goes into every single piece of macaron we made. Limited stock for now or till I understand what is the meaning of 自討苦吃.

You might be thinking it shouldn’t take us much effort to set up a macaron tower especially with us having completed numerous macaron towers throughout the years.
