There are quite a few types of dried chillies to choose from.
Bullet Head!! (子弹头干海椒) which is source directly from Sichuan to preserve authenticity.
It has a nice crisp in texture, at the same time, well balanced in fragrance and level of spiciness.
We use it in our signature dish (Find the Chicken in the Chillies) aka. 辣子鸡 the dish that’s fun as the name and addictive like no others!
