Blackchin Tilapia fish #ปลาหมอคางดำ is one of the invasive species negatively impacting the national ecosystem, the efforts to reduce it is central to the Thai Governments efforts to create more balanced natural habitats.

Kanomjean Pla: A Story Told Through Sustainable Flavors Kanomjean Pla, a dish that reflects Jaras' commitment to sustainability. This zero-waste masterpiece features invasive black chin tilapia, showcasing the full potential of the fish. The Kanomjean noodles are made from the fish itself, complemented by a rich Southern roast curry and bonefish powder. Sustainability Corner
Our in-house innovation is best displayed at our sustainability corner, where we engage in upcycling practices, such as repurposing food waste. Our housemade prawn oil for example is crafted from surplus prawn heads and shells, and is used to elevate the flavour of curries, Tom Yum, and soups with an irresistible umami richness. Other delights from the corner include experiments in fermentation like, the Phuket Pineapple Kombucha, Mushroom Umami and Fish Garum. At Jaras, we are committed to supporting local farmers and using the finest organic ingredients. We source our goat meat from the organic Bangtao Farm for our MASSAMAN PAE: Southern slow-cooked Bangtao goat, Song Khla Hausa potato, coconut milk, and a brew of tamarind and Tanburi sugar palm. Our chefs make the most of every part of the freshly caught prawn from Sarasin Farm.
The succulent meat creates the perfect Yum Som-O, while the head and shell enrich our signature prawn oil and paste for Tom Yum and soup. A prime showcase of zero-waste cooking.
Not far from Jaras lies a small place with 20 acres of land, where local veggies thrive. Their organic crops bear the stamp of the nature they were created in.
We visited Grace Farm to immerse ourselves in their produce, terroir, and production process, gathering knowledge and inspiration to bring back to our kitchen.

Elevate your dining experience with our highlight – grilled invasive plants from the south, served as a vegetable inside the soup. These plants perfectly complement the spiciness and sourness of the curry paste, generously drizzled over the catfish for delightful bites.

Blackchin Tapila fish from Samut Songkhram are hanging for a good cause. We work closely with locals from Samut Songkhram to address the unresolved environmental issues in the south of Thailand. Tapila fish overgrowth in the area has led to imbalanced environmental issues. Chef Nui is currently preparing a brand new dish at Jaras using these smoked Blackchin Tapila fish.
