It ain’t Taco Tuesday, but these babies are so good, you’re going to want to eat them at least 2x a week.
Looks like chicken, taste like chicken but it’s oyster mushrooms, battered and fried in grape seed oil. They are so good and would fool anyone. I find oyster mushrooms at my local Asian market. They are healthy and delicious !

Din din comes together in under 30 minutes and it’s so delish, so easy, and packed full of flavor.
Here I present my take on a popular Kenyan spinach dish called SUKUMA WIKI. It’s typically served with ugali, a cornmeal porridge which is a good blank slate for all of the flavors packed in this spinach dish. SUKUMA WIKI is a vegan dish, as most Kenyan meals don’t revolve around meat. It’s expensive!
You could easily add shrimp, beef, or chicken. Or make another meat entree, but I think it’s good on its own with a side of paratha ( Indian bread, pictured) or traditional chapati (Kenyan bread).
I’ve taken some creative liberty and created this RECIPE
1 pack frozen spinach, squeezed
3 Roma tomatoes
1/2 cup diced onion
2 tsp miso paste
Salt
Pepper
A few dashes of worchestshire sauce
A few dashes of coconut aminos sauce
Trader Joe’s “chikin” seasoning
1/4 cup grape seed oil
Sauté onions until translucent. Add spinach and remaining ingredients (minus the tomatoes, save until the end) . Cook for about 10 minutes and then add tomatoes and cook for another 5. Add more oil if necessary to make a “sauce “

Dinner was winner. Chinese stir fry + jasmine rice and frozen egg rolls. I made this using brown sauce from my local Chinese restaurant and I added ginger-garlic paste for extra flava 😋. Take out made healthier.

No coffee, but packed full of vitamins. Actually 92 of the 102 essential minerals required by the body to be exact! Sea moss is beneficial for clearing up excess mucus, boosts energy, reversing respiratory issues, provides thyroid support, supports digestion, good for anemia, good for the skin, and boosts libido for men.
Recipe
8 ounces cashew milk or your choice of milk
2 tablespoons honey vanilla sea moss from (my herbal business)
Sweetener to taste
Pinch of cloves, cinnamon and salt
1/2 tsp vanilla
Blend together and then warm on stove
You can’t feel like a million bucks eating from the dollar menu. BBQ jerk portabellas. Roasted butternut squash and broccoli. Avocado + everything bagel seasoning.
Eat life.

Plant drippin’ goodness from the garden. I harvested zucchini and kale to make this simple and easy dinner. Spelt pasta, jar marinara sauce, and veggies. Dat’s it ., Dinner done
How can you not enjoy the bounty of summer?
My hardest decisions are should I eat watermelon, cherries, plums, or peaches for dinner.
But, here’s a little dinner inspo.
Okra sauté with garden tomatoes, onions, black eye peas and some leftover stewed corn over jasmine rice.
I don’t like to waste food, so this was me combining leftover dishes to make a new one. Dinner under 30 minutes.
I love a good drink and agua frescos are my go to for summer. This one features limes, cucumbers from the garden, and watermelon. Sweeten with agave and a pinch of organic stevia. What’s your favorite summertime refresher?

This recipe came together easy with fresh haricot verts steamed lightly with salt vegan butter and the sauteed with honey and chili onion crunch , oh and some ginger garlic paste.

Trust me this meal was worth the diarrhea I shouldn’t have eaten the raw fruit. Travel tip #1 . Don’t eat raw fruit. But I’m greedy and sometimes I forget my own advice.
