Greetings Everyone!
I have been pondering the “Covid Fallout”. Who ever thought we would live through something like this in our lives. And although we are just emerging 3 years later, it won’t be for at least a decade or two before we can objectively evaluate the fallout. We, I, the world has been pushed/forced to attempt things unfathomable previously. I think my dear, sweet Dad would be proud of me for trying everything I can/could to keep my restaurants, livelihood and community gathering places afloat. Being in the restaurant business during these “Covid Years” has been challenging to say the least.

Stolp Island Social, my restaurant in Aurora, has been particularly challenging as we opened 3 months prior to the Covid Shutdown. There has been no more difficult time to operate a restaurant than since The Great Depression. It is also a project, restaurant, business and commitment that I take and will continue to take as seriously as I possibly can. I adore the community of Aurora and am incredibly proud to be a part of it.

I understand there are some people who are angry that the restaurant community in downtown Aurora has received assistance from the City since the Covid Shutdown. It is crucial for the public to realize that the City of Aurora, one of the best run city governments in the entire country, committed to creating an economic revival of its downtown long before the world was hit with Covid. No other industry was shut down nation-wide longer than restaurants which is why they have received so much support.

The passion, achievable and forward-thinking ideas the City of Aurora is implementing are required to see their mission through. Fundamental to their mission is to transition downtown Aurora into a healthy, viable, economic driver for its residents as well as near by communities.

Whether I am able to keep Stolp Island Social open for the long haul is yet to be seen. All I know, is that since the start of Covid, we all, personally and professionally have had to make decisions that once seemed ludicrous. A perfect example of this is having Stolp Island Social take a “Summer Vacation” literally closing it down for nearly 2 months during the Summer. In truth, it was our only option to remain viable as we will lose less money being closed than being open. Crazy concept isn’t it?

This being said hindsight is 20/20. When we opened in November of 2019 with incredible fanfare and a packed house night after night everyone thought “yes, fantastic idea. This is just what Aurora’s downtown needs.” Now 3 1/2 years later people, including myself, are wondering “perhaps a steakhouse wasn't the best option due to its price point.” And in fact, we will truly never know because Stolp's incredible forward trajectory came to a thunderous halt just 3 months after opening. The thought process when developing the restaurant was that Stolp Island Social would be a draw to bring folks to the downtown, whether or not the Paramount was open. As we have seen, the downtown has not yet proven a place that draws those from outside the community as the City had hoped; even the Paramount is having difficulty filling its seats.

My hope is that the renaissance begun in downtown continues, even though it is going to take longer and even thought there will be and have already been Covid casualties along the way.
