! A multi generation family farm located in Joaquin Texas. “We strive to bring clean, organic products from pasture to table”, and that’s something I can taste.
Ive been exploring different providers of beef, and I’m very pleased I had stumbled across these guys thanks to a recommendation from . Mans got great taste 👌🏼
I did this guy up with 3 woods technically (oh boy, I felt some eye brows raise already), but hear me out! My logs are Apple Wood, giving off a light sweet flavor to compliment the wagyu aspects of this particular animal. (Sometimes, I find that with applewood, *slightly* greener can be a good thing as well. They give off a tad more flavor without the creosote taste creeping up on you. Obviously, keep the green in moderation like any seasoning.) Once I got a good bed going I wanted to continuously blast the meat, especially in the first 3 hours when it was absorbing the most flavor, with oak from . Oak is just such a medium flavored wood that sets the tone for good barbecue, I can’t help but include it in all of my beef cooks. Now, while most people would continue this route, I felt I wanted to round the flavor off a bit, and also get a more “Texas” flavor going as well. To offset (pun?) the sweet Apple Wood, a chunk of mesquite hit the fire every 3-4 hours. The mesquite was very light, but still there.... and the flavor profile of the 3 were incredible on the palate as I’d hoped. I’d say this cook was about 40:50:10 Apple:oak:mesquite. , who’s not much of a brisket lover (grab your pitch forks!) actually enjoyed this one, and said particularly it was the best one yet flavor wise. Without a question, ‘s brisket was also the juiciest we’ve eaten, thanks to their care and attention to their product.
Of course, this was all smoked up on my , and head to toe, was about a 12 hour cook, with a 4 hour rest (we were hungry, and I truly don’t think dragging the rest out any longer would have helped). Fun cook, great product, and even better eats; is currently at the top of my list for m
