Our South Congress shop is a toddler 🎂 Two years have flown by since we took these noods down south, and we've loved every minute of it. Other than our incredible team, of course, we know we have y'all to thank for all the good vibes and chill times.

6️⃣ To embrace 'wabi-sabi,' the appreciation of imperfections, the team covered up damaged parts of the floor with steel patches instead of reflooring.

The noods we serve with our tonkotsu are thin for a reason; not only does each slurp deliver the purr-fect amount of our well-balanced, 60-hour broth...
They're also quick to cook and easy to eat! Their roots lie in Fukuoka, Japan, where food stalls offered fishermen something fast and filling on their lunch break.

The chilled bowl is back.
With summer-worthy toppings like sweet tomatoes and crisp cucumbers in a citrus-soy dressing, this dish has all the elements of a salad, BUT WE SWEAR IT'S NOT👇
🧊 Cool noods and spicy pirikara pork make sure you're fully fueled
🌶️ Chili oil and a swipe of karashi mustard add that final kick of signature Tatsu-Ya flavor
It's not a salad, okay (but it might hit just right if you're craving one).
One thing you can always count on for comfort is our rich, creamy tonkotsu broth; it's kind of what we're known for.
We've purr-fected our own recipe with 60 hours of pork-bone simmering and a ton of flavor, but legend has it we've got the ramen gods to thank for the process.
Story goes Tokio Miyamoto came up with the original recipe in 1937, but it didn't become the silky, flavor-packed broth we know and love until 10 years later, when Katsumi Sugino left a pot on the stove for too long 🔥

A limited-time slurp sesh that's more refreshing than rich, this dish offers chilled noods tossed in a tangy citrus-soy dressing, topped with fresh, cool cucumbers, summer tomatoes and spicy pirikara pork.
A drizzle of chili oil and a smooth swipe of karashi mustard add an extra kick to this summer staple.
