With Thanksgiving over you might be looking at all the leftovers and wondering what to do. Well unless you have a son-in-law that knows what to do with a turkey carcass you will probably start slicing that leftover bird and making sandwiches. Stop! I have three words for ya: GUM FREAKING BO!!!
Boil that bad boy down, bones and all, for the stock.
Pull the bones out and leave the meat in.
In a cast iron skillet make the roux and add the trinity.
Add a good andouille to the stock.
Add the roux to your taste.
Salt and pepper to taste.
Serve over Louisiana rice.
Everybody has a little twist to their gumbo but you get the idea.

Tomorrow's Thanksgiving Day and once it's gone it will officially Christmas party season. Whether it's at the office or at home, give me a call and let me help you put it together.
There's nothing quite like the cool sunny days of the fall and winter around here. There's also nothing quite like the cold, damp and rainy days that we get during those seasons. An unfortunate side effect of those nasty days is the cold and flu that gets passed around. As a parent and husband I know first hand that even when you're sick things still need to get done. The next time you get ill take care of yourself. Take off work and call me. I'll get the groceries, errands and anything else done. I can even pick up a hot bowl of gumbo from your favorite restaurant.
I hope all you hunters put a whipping' on what you were out there shooting at! Here's a killer egg roll recipe that my neighbor gave me:
1 Bag of Broccoli Slaw
1Package of Egg Roll Wrappers
1 to 3 Ratio of Ground Pork to Ground Deer (One Pond Total)
Vegetable Oil
Soy Sauce
Salt
Pepper
Garlic Powder
Ground Ginger (optional)
1 Egg Beaten (optional)
Brown and season the meat to taste in a pan then mix with the broccoli slaw in a large pot or bowl. I always go heavy on the meat and light on the slaw because I'm a carnivore but you can mix it to your preference.
Lay out and fill the wrappers by spooning the mixture onto the wrapper just above the corner closest to you.
Next rap the left and right corners over the mixture.
Fold the corner closest to you over the mixture.
Roll this forward leaving a small amount of the corner farthest from you exposed.
With a brush or your finger (like I use), smear the beaten egg over the exposed corner then complete the roll to seal it. If you don't have an egg, water works fine.
Fill a frying pan with enough oil to go half way up the egg rolls when you have several going cooking in the pan. About 1/4 inch should do.
At just shy of medium heat, fry them to a golden brown, set them aside to drain and enjoy. I buy duck sauce but I have also had them with just about every other Asian sauce and have yet to find one that I didn't like.

Next week the kids will all be out of school for the holiday. If you need to be there for them, I'll be there for you. This is also when many families go out of town to visit relatives or for vacation. Snow skiing is particularly popular with South Louisianians during Thanksgiving (and Mardi Gras) for some reason. If you plan to leave town give me a shout. I can check on your house, pick up mail and even care for your pets. Have chores or repairs that need to get done while you're out? I got it.
Helped out a real nice lady (Miss Lily) the other day. Her husband is 91 and needs special attention which keeps her and several other people occupied. I was more than happy to move some furniture and take care of some things that they just can't get around to doing.
