Capitol Bar’s Honest Drinks
Classic cocktails are considered "classic" because they have stood the test of time and continue to impact the cocktail culture centuries later. The Manhattan was developed in the 1860s, and the Martini shortly after that. The Old Fashioned was originally known as simply a “whiskey cocktail.” And believe it or not, the daiquiri is not a frozen drink and should have nothing to do with bananas.
Capitol Bar, located in a tidy green patch of State Street in Boise, Idaho’s NW End, admonishes the classic cocktail culture, and adheres to timeworn recipes. After all, there is a reason these drinks have been around for so long and bartenders who view their work as a craft, have embraced long forgotten cocktails like the Martinez, the Gimlet and the Scofflaw.
Though we boast an astute list of interesting canned and keg wines and tasty craft beers from the Western U.S., classic cocktails are our main focus (aka - our Jam).
For the unfamiliar, the Capitol is an inviting environment to delve into cocktail history. For the familiar (aka-our neighbors), you now have a State Street sanctuary for celebrating the art of the cocktail or just passing time on a random weeknight.
