One of my New Year's resolutions was to be better at planning ahead! Update: I still stink at it.

Japonaise will be closed July 4th and 5th so that we can travel and spend some time with family. We will be open Saturday and Sunday with a slightly limited menu, as my staff will do their best to pump out all of our creations without me. Our normal Thursday-Sunday schedule will resume the following week. We hope you understand and apologize for any inconveniences this may cause. We appreciate the constant love and support, Happy 4th everyone!

It's been a hectic couple months but step-by-step we're trying to get back to full production, back to the way things used to be......well at least a new and improved version of what used to be!

We're still only open Thursday-Sunday, but extending our store hours until 6 PM. We know that closing at 4 PM has made it difficult for some people to stop by so we hope by extending the hours, we'll get to share the pastries we love with more of you.

Thanks for all the love and support thus far, it really means a lot. It pushes me to keep doing my best and makes it easier to start my days at 1 AM :).

UPDATE: CLOSED TOMORROW! Opening week is a wrap! If you were able to come by, you may have met two newcomers to our cast of characters, my wife Nao and our baby Gakuto. Thank you for the overwhelming love and support and for bearing with us as we get this ball rolling again!

‼️ For the rest of August, we’re going to be closed Mon-Weds and open Thurs-Sun 8a-4p. ‼️

I really wanted to be back from the jump open 7 days with a full case and bread rack but all the usual bumps in the road have led us to make the tough choice to limit our selection in favor of consistency and honoring the time you spend in line!

Hi everybody!

It’s finally happening… The infamous Japonaise Bakery is reopening on Monday, July 24th! We’ll be open from 8:00 am to 4:00 pm and have a limited menu at first, but should be back to full production within a few weeks. We will be open the entire first week but will transition to our regular schedule starting in August of Thursday - Monday, closing on Tuesday and Wednesday. Keep an eye out for future updates as once we get going we will be extending our hours and menu!

It’s been a wild ride to get to this point but I really appreciate all the support and love we have received. Thank you isn’t nearly enough for you all being so patient.

I can’t wait to see all of you!

RE-OPENING SOON!

It’s been a long wait, but Japonaise Bakery is looking forward to finally re-open this summer. Not only we are going to have your old favorites, but we will be pumping out many new items as well. When we have a better idea of the exact opening date, we will post that as soon as possible. To check out new menu items, please keep an eye on our social media.

Hi everyone,

I want to and need to start by saying I'm sorry. I know some people are upset and have made some accusations about me and the uncertainty of Japonaise reopening. For the people that know me, I'm a baker first, businessman second, and social media user never. Although the rumors hurt, I understand and owe you all an apology for the lack of updates along this process, that is completely my fault. Just so the message is clear…Yes, Japonaise is reopening.

We are so close I can almost taste the melon pan! We've gotten all of our big equipment hooked up, including our new frialators to bring back our popular donuts. Yes Curry doughnuts and An doughnuts will be back! The new mixer and walkin retarder will both be vital in pumping out more volume efficiently. I also purchased an onigiri machine from Japan and will be doing a more extensive line of onigiri and even making them to order once we fully get going. All this on top of all of our old favorites!

The storefront has been completely redone with a brand new floor, ceiling, lighting and new display cases and custom made countertops. There is a newly built station for making drinks/onigiri, and there is an open-kitchen area where you can see things going in and out of the ovens. The new setup should lead to a more efficient work area for my employees and a smoother experience for all of you. I hope you all love the new look as much as I do!

I'd like to give an exact date but we all know how that has gone up to this point, but realistically I am aiming for within a month. We are doing all the last finishing touches and are so anxious to get back to putting out some yummy creations. Looking forward to seeing you all soon and maybe I'll even catch some of you guys while I'm painting outside. Please keep an eye out for our other posts on social media. I am now looking for new members of the Japonaise team to help me take this place to the next level. I truly believe, with the potential of what my mom started 30 years ago, the pie is the limit. No, seriously, don't worry, I won't be making pies!

 まずはじめにお詫びからさせてください。お客様の中には、Japonaise Bakeryが再開するか否かにおいて疑念を抱いていた方もいたと思います。ビジネスマン、ソーシャルメディアユーザーである前に私がパン職人であることをご存知である方も多いと思います。世間でいろいろ言われていることも承知しています。しかし、私がこれまで再開までの過程について情報共有をしてこなかった私に責任があると思っています。遅くなりましたが、今回、皆様にJaponaise Bakery が再開することをお伝えします。

 Bakery再開までもう一歩というところまできています。すでに、機械類の搬入も済みました。以前提供していたパンやケーキ類に加えて、再開後はカレードーナッツやアンドーナッツといった昔、提供していたドーナッツ類も販売しようと思っています。日本からはおにぎりマシーンも導入するので楽しみにしてください。

 店頭部分においては、床、天井、照明、ショーケースやカウンターなども新しくしました。飲み物やおにぎりを作る場所も新しく設置し、さらには、キッチンの中が見えるようなデザインにしました。今回の新しい配置デザインが働く人にも有効で、かつお客様にも店内を楽しんでいただけたらと思っています。
新しくなったお店が皆様に気に入ってもらえることを願っています。

 まだ、はっきりとした再開の日時はお伝えできませんが、1ヶ月以内には再開したいと考えています。再開までの準備も最終段階に入っています。はやく皆様に美味しい物をお届けできることを楽しみにしています。

Hi everyone!! I hope you all are well and staying safe. This update on my renovation is way overdue and I apologize for that. I also need to apologize for the poor timeline regarding reopening in my last update and I hope this clarifies more of the details of what has been going on behind the scenes. I have all kinds of excuses but I have to take the brunt of the blame. Hopefully this update will explain why it has taken so long. I have recently heard rumblings about Japonaise not reopening but that is just not true. I unexpectedly had to leave the country for a bit (exciting reasons why below!), but I am recently home, motivated and ready to get back to serving the pastries I and many of us have grown up with. I hope to honor my mom's legacy, the Japonaise that we have all come to love over the past 30 years, by realizing its highest potential for 30 more.

That being said, this whole renovation process has been a huge learning lesson for me. Most importantly, that nothing is as easy as it seems. On top of not preparing nearly well enough before closing my doors, I also ran into numerous issues with what I had wanted to do with the space. I literally had to have my architect redo my drawings half a dozen times. That alone wasted several months. Also not being on the same page as my landlord regarding plans for his building cost me several more months. Of course this whole covid issue we've all been dealing with didn't help in terms of shipping delays and the town hall being closed. And most recently, and this is good news, I unexpectedly joined the club. I had my first child and got married in Japan! (It's a boy!!) I was there for the last few months and recently came back to the states ready to hit the ground running with the goal of reopening in the next 3 months.

I didn't know what I would miss the most when I closed a year ago, but now realize how much all of you are a part of my life. I miss seeing all of you and your faces light up when you walk in to find showcases full of yummy food and sweets. It's been so long that I've seen most of you. I can't wait to reopen the building, and oven doors!

I have one more hurdle to pass with the health/building department, which hopefully will be done this coming week. Then it’s 3 months to get all the work done and the rest of our equipment and materials delivered. I know it has been forever since anyone has stuffed an azuki cream in their mouth, and I am truly sorry for how long it has taken. It makes me a little sad that some people have thought that I've run away or something, but that's my own fault for not posting more regular updates. I will post another one during the last stretch of this process, but…. I WILL be back butter and tastier than before.

Amidst all that is going on, we have started a GoFundMe Campaign to raise funds for our ongoing renovation.

We are humbly asking for your help to provide emergency funds to go towards staff payroll and the renovation we have been planning for years now. Upgrading all of our industrial kitchen machinery will greatly help with production for my team and redesigning the store front/patio will increase seating and shopping space for our guests to relax in a more open setting. We would also like to redo our flooring for the entire store (both back and front) to improve accessibility and workflow.

Dear Patrons, our mixer has not arrived yet, but our good friends at another bakery has offered to let us borrow their kitchen space to prep dough for this weekend! ⁣

Our schedule will be as follows: ⁣
Friday (4/16): CLOSED⁣
Saturday (4/17): 8AM-8PM⁣
Sunday (4/18): 8AM-8PM⁣

On Sat and Sun we will have our full menu available. Hope to see you soon!

As some of you may be aware, our mixer broke this past Saturday. Unfortunately, this means we are unable to make any dough for our breads this weekend. ⁣

Our schedule will be as follows: ⁣
Friday (4/09): 8AM-8PM⁣
Saturday (4/10): CLOSED⁣
Sunday (4/11): CLOSED ⁣

For Friday, we will be open but we will not have our bread products (including shoku pan, kashi breads, croissants, scones). ⁣

We will have cakes (slices and whole) and pastries (such as creme brûlée, fruit tarts, bread pudding, etc), as well as mochi ice cream, onigiri, a limited selection of sandwiches, and our grocery items. ⁣

We hope to be back next week with our usual production and our usual Friday through Sunday schedule. ⁣
We apologize for the inconvenience, but we thank you for your understanding! 🥺🙏🏻

Hiroko-San started the bakery back in 1985 in Brookline and a few years back, her son has taken over creating all of the wonderful bread/kashi/croissant pastries that you see in the store today!
