The Town of Brookline’s mandate requires dine in customers to show proof of Covid-19 vaccination. We still warmly welcome and encourage our guests that are unable to show vaccination cards to order to go. We appreciate our customers and respect the choices they wish to keep.
Just like our Crispy noodle nest dish above, we are creating a warm and safe nest for our community while trying to thrive in our restaurant business.

Meet Me Monday: New Saigon Noodles & Grandma Qui Anh
Okay, there’s really no such thing as New Saigon noodles, this is more like a Pad Thai in disguise. Why would a Vietnamese restaurant have pad Thai though?
It all goes back to our matriarch Grandma Qui Anh. On her journey to America, she had to stay in a refugee camp in Thailand for 9-10 years and picked up the language and culture. When she helped create the menu for Pho Viet’s, the New Saigon noodles just felt natural.
We love knowing backstories of restaurants and recipes! Let us know some of your favorites!
