makes this mozzarella only in the summer when the Jersey cows are out on pasture and the milk is rich and buttery. They make hundreds per week that they sell at the Carrboro farmers markets and on our recent pick up of cheese we’re able to grab just a few. Get one while you can!

Featured in this month’s box is Tommette Brulée, a sheep’s milk cheese from the south of France. The rind is mottled with rust and white molds and, when ripe, is torched to add a toastiness to the already brown butter and roasted caramel flavors of the cheese.
Crystals, sweet cream, butterscotch. If those tasting notes in a cheese appeal to you, this one’s for you! OG Goat is a gouda-style cheese made in Belgium from goat’s milk and cow’s milk cream for added richness and creaminess.

After learning that eats this butter daily on breakfast toast, you all cleaned us out! What is so special about this golden butter? The pasteurized cream from farms in Northern France is cultured and churned then molded by hand and embossed with a cow. It’s salted with fine sea salt crystals, which enhance the sweet cream flavor and gentle tang. Use as butter or eat like cheese - you decide.

Sometimes a cheese is just ready to eat and right now in the cheese case, Taleggio D.O.P. is it! Barely able to contain the pillowy curds of the paste is a washed rind that gives the cheese its characteristic funk. This cheese is ready to be slathered on a crusty boule and topped with Speck Alto Adige PGI and stewed tomatoes.

Taking in the last few cooler evenings and enjoying this vintage Raclette grill. We’re melting Morbier, a cheese recently allowed back as an import and as easy a melter as Raclette.
Join us for Raclette night - every Thursday through the end of May.
We have our first South African cheese in the case. This is Gruberg, an Alpine-style cheese with a smooth paste and nutty, earthy aroma. has produced cheese for 25 years but only recently have the cheeses made their way stateside.
With its medium bodied paste, we’ve found it pairs best with lighter bodied red blends or an earthy Pinot Noir.

The end of the season for this spruce-wrapped cheese akin to Vacherin Mont d’Or is almost near so grab one of these while you can. We kept this cheese in the box, wrapped the bottom with foil and put her in the oven to heat slowly for a fondue like experience tasting of butter with notes of pine forest.

It’s a busy weekend in ! If you’re in the area for the St. Patrick’s Day Parade, Super Saturday at , for The Eagles concerts or for the Bar Crawl stop in and ask for a sample of Coolea. This Irish Gouda-style cheese has just enough sweetness to feel like a treat!
Remember we validate parking for 2 hours, but this weekend, enter the parking deck from 6th Street.
👏 🏆 🙌 Congratulations to for their Bronze win for Drovers Road in the Natural Rind Cheddar category at the World Championship Cheese Competition held last week in Wisconsin. The competition is held every two years and had over 3,300 entries from 25 countries. That’s a lot of cheese!
Since purchasing a dairy farm a few years back, Looking Glass Creamery has transformed the fluid milk dairy into a destination in Columbus, NC. From building out a new creamery and farm store to growing, cutting and baling their own hay for the cows, all the hard work is being recognized. Drovers Road definitely comes from pasture raised cows, as evident from the butter yellow color of the paste. The flavor is as buttery as it looks yet shows off the terroir of the land and finishes with a cheddary tang.
We’ve got plenty for you to grab a wedge to see for yourself just how good it is!

We've so enjoyed all the cheeses that English Farmstead Cheese have made over the years. We'll continue to stock Buttercup, Ashford Cheddar and the Cheese Curds while we can. We wish Susan a happy retirement!
Another hard post: It was six months ago that I announced my plans to retire. Since then, I have been asked a lot of times, when are you closing? Well, those decisions have been made. The timeline has been moved forward a few months as it has become obvious to me that physically I am done with cheese making. I have decided to go ahead and retire on the first of May. The last weekend for English Farmstead Cheese will be May 3 and 4. The store will then be closed for at least two weekends as a transition to the new business that will take over the space begins. You can check out English Cattle Company and see all that Jay will have to offer. Many of the same products and faces will still be here with a few new things added. So, plan to visit during their grand opening tentatively scheduled for Memorial Day weekend. As for me, I will certainly miss all my friends from the cheese world, but I am truly looking forward to navigating this thing called retirement. The dairy will continue to operate until summer but you will soon begin to notice more black cows than the usual black and whites that have been here for decades as Terry transitions to more beef than dairy. Don’t be sad or mad, be happy for us as we have struggled with this decision and are truly at peace with it finally. Also, be happy for Jay as he begins his new adventures in business and please continue to support him as you have us for the last 11 years.

Tomme-Belina is a perfectly balanced buttery and herbaceous blend of cow’s milk and sheep’s milk brought to us by located in Glasgow, Kentucky. They are the only licensed sheep milk dairy in their state and are milking both sheep and cows in the same parlor, no easy feat!
Cheesemongers tip - the natural rind on this cheese is edible and adds a lovely earthy, mushroomy note that gives just an extra something to the already delicious cheese.
For a limited time, get your favorite shortbread cookie filled with dulce de leche in ❤️ shape.
Always available at our shop are Mini Alfajores.

When coming to visit us, please enter the parking garage from 6th Street due to scheduled maintenance at the 7th Street entrance to the parking garage. Maintenance will take place for the next two weeks February 12th - 23rd.
Please note the elevators on the 7th Street side will also undergo routine maintenance from 2/12 - 2/17. Please use the elevator bank on 6th Street and walk along the light rail to the entrance.
Remember, we validate parking for 2 hours!
