This evening’s dinner feature is elk loin ragu. The tender loin is slowly cooked in a rich tomato sauce and served over pappardelle noodles. The elk is a healthier version than beef and we think even more flavorful.
Yesterday we teased fall was in the air and today it is gone ❄️🌬️🌨️.
Stop in on this cold day and warm up with our soup flights: tomato bisque served in a bread bowl, French onion, vegetable, loaded baked potato served with spiced Madeline.
Introducing Brie cuterie!
Melted Brie served in edible bowls for dipping and served three ways: cranberry with honey and rosemary, roasted garlic butter, apple strudel with cardamon and toasted pecans.
Fall is in the air (and if we weren’t in denial we’d say fall is here!)
That means soup flights are back. Choose 3 or all 4: tomato bisque served in a bread bowl, French onion, vegetable, loaded baked potato and served with a pumpkin-spiced Madeline dipped in white chocolate.

So much Halloween fun today and we are piling on and starting the day with our Halloween-themed breakfast board.
Mummy Denver omelette hand pie, chorizo and potato sandwich, sausage and cheese sandwich, pumpkin French toast, apple pie bites, chocolate spider doughnuts, mummy fingers, carrot muffins.
And two glasses of complimentary mango mimosas with each board.
It is Friday and that means ladies’ day (and, of course, the weekend!)
Did you know we change our menu every few months? We remove items that may not be selling the best (sorry if one of your favorites doesn’t make the ✂️).
But then we add new, seasonal items mostly based on guest input. We have some exciting things coming: short rib French Dip, elk medallion ragu, Nate’s special red wine steak, chicken pot pie, soup flights and what we are soft launching tonight MOZZA’ SHOTS. Do you have something you’d like us to offer?
These are basically mozzarella sticks in shot glass form, breaded and deep fried and served with a tomato bisque sauce and ranch dressing. Fill ‘em up and enjoy.
Making John stop to have his picture taken is the longest I’ve ever seen him stand still.
He is so fast at prep and so fast and thorough in what real restaurant people call the line. Imagine 20 people coming to your house at one time and all wanting fed in 20 minutes or less. The pressure is palatable, but John is really amazing at just efficiently getting great food out as quickly as possible.

As we continue to honor the really phenomenal Paris West team, today we are so pleased to recognize Devin and Nate. Devin recently stepped into the position of head chef and Nate assistant head chef. (They actually asked for more responsibility🤯.)
In the few months since making the transition, they have continued to demonstrate impressive leadership, skill, selflessness and commitment.
Devin is a big thinker and brings a keen sense of organization and time management to his job. Nate, who is brand new to the industry, is as impressive a young man as we have seen. He is not only developing into a phenomenal chef, but is putting his artistic skill to use in presenting beautiful dishes.
Together they make an unstoppable team. Thank you Devin and Nate.
October is Domestic Violence Awareness Month. Our own Safehouse Cheyenne does an amazing job helping victims and families through some terribly difficult journeys.
Today we will match all tips and donate the total to Safehouse. The guest with the largest tip will receive this great Halloween-themed basket donated by Helen Becker.
And don’t forget this weekend’s board: breakfast tacos! All the breakfast meats, pancakes, eggs, tortillas, green chili, pastries.
This weekend we are featuring the breakfast taco board. Whether you use pancakes to form a taco or tortillas, we have the fixin’s.
Chorizo, breakfast sausage, carnitas, bacon, green chili, cheese, scrambled eggs, potatoes, chocolate croissant, churro coffee cake. (Some aren’t pictured because they are still cooking; it takes longer when most things are from scratch.)
Today seems a perfect day for some afternoon beverages!
We are celebrating Thursday with this week’s desserts: cookie butter cream brûlée (oh my!), dark chocolate covered blueberry cream brûlée, lemon tart with a meringue top and, as always, The Smash. (The Smash is our complimentary celebration dessert. Smash the hollow chocolate dome to reveal a dessert surprise.)
As we continue to thank and honor the great team at Paris West, today we feature the Amazing Amanda. Amanda’s been creating drinks for nearly 20 years. She can do it all and then do some more.
She has single-handedly created an environment that makes everyone feel welcome. If you are having a great day, stopping by and seeing her will make it even better. If you are having a difficult day, she is an equally impressive listener and advice giver (you’d think she had a PhD in counseling😀).
Ever since we opened we have had this reputation of being too fancy. The name may imply fancy, but the name is really about the building and not because we consider ourselves fancy. We want to be a bar and restaurant where everyone feels welcome and appreciated while delivering great food and service. Thank you Amanda for making that happen.
As we continue our month of honoring and acknowledging the great team at Paris West, today we would like you to meet Jacob.
An impressive young man to say the least! You will notice right away how warm and friendly he is and how much he genuinely enjoys people. And then add to that his attention to detail to making sure your visit is the most enjoyable experience possible and we think you will plan to come back just to see Jacob!
He is creative, innovative and shows the maturity of becoming a great problem-solver. We count ourselves so fortunate that he is an important part of the Paris West team. Thank you, Jacob!
Talk about going down a rabbit hole! We stumbled on some yummy mango champagne which, of course, led us to mimosas which led us to create Angel Food cake mango - curd French Toast. Three slices of Angel Food cake, fried in butter and served with syrup, mango curd and whip cream.

Our desserts are made-from-scratch and that allows us to experiment. Our most popular dessert is cream brûlée. Last week was key-lime and it was a hit. This week we are serving vanilla bean and s’more’s complete with chocolate, graham crackers and toasted marshmallows.

I’m going to be completely honest—there is there is an age group that we have struggled with. So when Cole came in for an interview I approached it with much skepticism. But he was impressive from the first meeting — articulate, committed, full of great ideas and that was before he started. Since starting, all of those traits and more make him so valuable to Paris West.
