E03 ⚡️on handbrew this week in Chicago. This lot comes from our friend and is our first release using a co-fermentation that involves wine yeast, dehydrated fruit and fruit glucose. It’s quite expressive with intense tropical sweetness and a dynamic acidity of ripe peach and loquats. More than anything its delicious and we’re eager to share it with you. See you soon ✨

R03 ⚡️ Koji Maragogype , our latest release produced by our friend Diego Bermudez in Finca El Paraíso. We had the privilege to cup this alongside several outstanding offerings during Diego’s visit in Chicago at SCA. We were especially taken back by how candy like this particular coffee was and quickly secured some without hesitation. In the cup it has a sugary mouthfeel reminiscent of pixi stix and a tangy spice finish similar to key lime pie. The aroma is rich in umami with floral hibiscus sweetness. This Maragogype is different because it has good nutrition that allows it to develop its entire profile, which is enhanced through processing with fungi such as Aspergillus Orizae. The process of this profile consists in first letting growth of the koji fungus on dried coffee pulp and coffee husk for 4 days at 35°c. After the koji achieves good growth rate and enzymes production, they put the koji on the coffee cherries for another 4 days in aerobic conditions. They then proceed to make a wet technique fermentation known as Amazake method, which consists of making a wine with the coffee pulp to bring malic precursors of the pulp. The aromatics compounds including the alcohol, fix into the coffee seed to increase the flavors and balancing the fermented flavor. It’s another example of Diego’s incredible ability to evolve coffee at the fermentation level. We’re grateful to partner with him again with this release which is now available online and in store by the cup and retail. See you soon ✨

Eternal Sunshine of the Spotless Mind ⚡️ Back on the menu at all stores. This iteration is a layered beverage made from two core flavor profiles representing the two main characters. For Clementine we made a shrub of soft citrus and mixed it with our house bitter tonic for a sweet yet wild flavor. Then we layer a dry juniper and algae coffee spirit that on its own is stiff and reserved. Together they consume each other to make a somewhat harmonious but maybe not perfect drinking experience, depending how you drink it. Either way you will want to remember it. See you soon ✨
