This project has been in the making for quite some time and we've been anxiously awaiting its release! Throughout many tastings with Chef Rick Bayless and the Frontera team, we developed the concepts for each bar to take you on a journey through different regions of Mexico, inspired by meals, spirits, and experiences!
All of these cacaos come from either Chiapas or Tabasco in Southern Mexico and are 70% cacao and 30% sugar, with additional ingredients:
Aztec
Additional Ingredients: allspice, guajillo chile, puffed amaranth and marigold

Oaxaca
Additional Ingredients: mezcal infused cacao and Oaxacan pasilla

Jalisco
Additional Ingredients: tequila-infused cacao and guajillo chile

Mole
Additional Ingredients: chocolate made with cinnamon, black pepper, and allspice, filled with mole.

Over the years we've worked with their team to experiment with different cultivars, processes, and most notably: brewing methods. Whether it was brewing thousands of extra strength pour overs, Pink Himalayan salted shots of espresso, hundreds of press pots, or triple-strength Chocolate-city style, our teams have always worked together to send Half Acre amazing coffee to incorporate in the beer.

Everyone was so happy with how the washed Catuai performed in Benthic that we utilized the same bean for Big Hugs! Changing it up a bit, we added more heat to the coffee in the roaster, pushing the roasting a bit further to a higher temperature before dropping it out of the roaster to caramelize the sugars even more.
