What's for dinner? Are you in the mood for something clean, light, healthy, and tasty? Ceviche is a great option, and it's pretty simple to make. It was a huge hit at our health fair recently. Recipe below👇

Ingredients:
- Fish. A few options to consider: Wild red snapper, corvina, sea bass, mahi-mahi, halibut, scallops or shrimp.
-Salt
-Lime Juice
-Fresh Limes.
-Red onion.
-Tomatoes.
-Cucumber.
-Fresh Cilantro.
-Optional additions: avocado and radishes can be used as garnish.

Directions:
-Step one: Slice the red onions and place in a bowl. Add the salt and lime juice and let these marinate while you continue- this will help remove the bitterness from the onions.
-Step two: Cut the fish into 3/4-inch bite-sized pieces and toss with the marinating onions.
-Step three: Add the remaining ingredients- cucumber, tomatoes and cilantro and give it a good toss. If adding avocado, wait until serving to add it.
-Step Four: Refrigerate for 45-60 minutes. The longer you let the fish cure in the marinade, the more “cooked” the ceviche will become. I find 45 minutes is perfect.

Huge to Ji Suk Yi for joining us on Friday October 18th as our emcee for our 9th annual From the Heart Gala! Ji Suk Yi brings her expertise as co-host of WGN-TV Spotlight Chicago.

Most recently, Ji was with NewsNation as a digital anchor, a host on WGN Radio and served as a fill-in host on WGN-TV’s “Daytime Chicago.” Prior to that, Ji was a contributing host on ABC 7 Chicago’s talk show “Windy City LIVE” for seven seasons. She also hosted the Chicago Sun-Times digital series “The Grid” that explored Chicago neighborhoods and restaurants, along with writing entertainment and lifestyle features.
