Finished in Vino de Naranja barrels from Seville.
For those unfamiliar: ‘Vino de Naranja’ is a white grape wine that is fortified with grape distillate that has been macerated with Seville orange peels, sweetened, and solders aged for at least two years.
Rye is not a spirit you see barrel finished very often. Even at J. Henry their limited or seasonal finishing releases we always enjoy have been bourbon bases. The spice of their rye playing with the softening effects of a fruit wine barrel finish are divine.
If you are familiar with sherry aged spirits then this will be feel familiar to you with a twist. Where you would find nuttiness with sherry you find fruitiness with a hint of candied orange peel and honey but the body and round edges of a sherry finished spirit are here as well.
We’ve got some spicy new pasta for you!
House made tagliatelle noodles with Nduja spiked puttanesca sauce, breadcrumbs, honey, and a healthy dollop of ricotta.
Our Walleye dish has gotten a makeover! Same crispy skin wallleye fillet from Lake Superior now nestled in a luscious potato risotto and some house made ham with beautiful cippolini onions from braised in balsamic vinegar.

Melon & Prosciutto is a timeless pairing. For this dish we are using Cantaloupes that are steamed, grilled, and fresh alongside some duck prosciutto we are making in house. Tying it all together is a sauce of brown butter and cherry vinegar (also made in house!) and some charred corn topping the melon pieces.

New dish alert! We have a few changes coming this week but the prettiest one has got to be this Panzanella. Farm tomatoes are dressed in a sherry vinaigrette and peach gazpacho from peaches and served with squares yesterday’s house made focaccia and sweet tropea onions.
Sounds good, doesn’t it? We’re exploring the possibilities of putting together a wine club that would bring 2-4 bottles of our favorite wines from Nettare right to your door once a month! We couldn’t get in fresh farm raspberries from and not make some version of a Clover Club. A pre-prohibition drink with a solid, traceable history is a rarity but this is one of them! The clover club was a men’s club at the Bellevue-Stratford Hotel in Philadelphia in the late 19th century. This was the signature drink.
We employed a little bit of cider apple brandy alongside their London dry gin to help those fruit notes pop and for this excellent summertime sipper.
If ever there was a reason to throw out the notion that a pink drink in a stemmed glass was not a ‘manly’ drink, this has got to be one of ‘em. Don’t you agree?
