Falafel and controversy!

Fala-who?! We’re glad you asked.

Falafel is a deep-fried ball, or a flat doughnut-shaped patty, made from ground chickpeas, fava beans, or both.

Herbs, spices, and onion relatives are commonly added to the dough.

It is thought to be a Levantine and Egyptian dish that most likely originated in Egypt, but is commonly eaten throughout Western Asia.

Although ingredients change from one country to another it’s one of The Middle East’s most common street food.

A widely held theory is that the dish was invented in Egypt about 1000 years ago by Coptic Christians, who ate it as a replacement for meat during Lent.

As Alexandria is a port city, it was possible to export the dish and name to other areas in the Middle East.

The dish later migrated northwards to the Levant, where chickpeas replaced the fava beans.

It has been speculated, with no concrete evidence, that its history may go back to Pharaonic Egypt.

Other theories propose that it came from the Indian subcontinent, where deep-frying was common, and brought west by Arabs or Turks; or that the chickpea-based food came from Yemen.

Falafel doesn’t contain meat, dairy, or any other animal products, and have become a popular food choice among vegetarians and vegans.

You know that moment when you make eye contact? That moment when that smokey plate is on the table.

That moment of “my senses are sharp, time slows down and my mouth waters a little and I can’t wait to finally take that first bite”.

As if I didn’t already have enough reasons to love koshary 🔥🔥🤤

This is Mr. koshary and this is his story.

He goes by many names koshary, kushari but his birth name (كشرى).

Now that you’ve been properly introduced here’s the back story.

Koshary originated in the mid-19th century, during a time when Egypt 🇪🇬
was a multicultural country in the middle of an economic boom.

It was invented as a vegetarian food 🥗, and it consists of fried onions, lentils, rice, macaroni and lemon sauce.

The local Egyptian sauce giving it its unique taste the dish is popular with.

Some believe it was first made during the British occupation of Egypt.

Over time, the dish has evolved through Egyptian soldiers, then Egyptian citizens. Koshary used to be sold on food carts in its early years, and was introduced to restaurants later.

This dish is widely popular among workers and laborers. It may be prepared at home, and is also served at roadside stalls and restaurants all over Egypt.

some restaurants specialize in koshary to the exclusion of other dishes, while others feature it as one item among many.

As traditionally prepared koshary does not contain any animal products, it can be considered vegan, so long as all frying uses vegetable oil.

So when we heard that our good friend Mark Jaloszynski was diagnosed with ALS, we wanted to do whatever we can to help. Take a look at his story below and share his families message.

This catering order was so special to us that owner Ahmed Saleh couldn't not go himself!
