I have been inspired by Sebastian White and his work on his non-profit, .evolved.network The Evolved Network NFP, since I was introduced to him by Chef .stegner Sarah Stegner of Prairie Grass Cafe in October 2022. Now Sarah is co-host of Local Food Forum’s “Better” Dialogues webinar series, and Sebastian is one of the guest experts for our next outing, a week from today (May 13), which focuses on food education and school food.
Already making an impact by providing cooking lessons and food education to underprivileged youths in Chicago schools, Sebastian is raising money to pursue his vision of building a restaurant and urban food garden to provide young people with culinary, business, and food growing skills. He is also a clinical psychologist turned chef and plans to provide therapeutical services to participants in The Evolved Network who need him.
At a recent dinner fundraiser he presented, Sebastian movingly discussed an important person in his life who inspired him to dream big. Please read the story in today’s issue of Local Food Forum.

Perry's Steakhouse and Grille in Vernon Hills: Our third local iteration of this Houston-based chain opened last month in Vernon Hills following locations in Oak Brook and Schaumburg.
Beyond steak: Perry's is most famous for its "seven-finger high" pork chop and a new roasted black cod with a chorizo crisp.

Lee and I joined my college roommate, Julie, and her husband, Edde, at the Kent Stage in Kent OH for The Dark Side of The Moon Pink Floyd Tribute Band 3/6/2024. So much fun and great to see Tom Simpson, The Kent Stage owner. We were both part of ACPB (All Campus Programming Board) at Kent State University back in the 70s. He was on the concert committee; I was the promoter, fancy that!

Chesa's menu has short rib and grits, seafood gumbo with a gentle heat, and buttery wagyu sliders on buns that we wouldn’t know were gluten-free if it wasn’t our job to know these things.
