An Anatomy of Great Smash Burger Patties
(In short, great smash burger patties are broken, irregularly shaped, thin, thicker, crispy, and juicy all at the same time.)
The Components of Great Smash Burger Patties
1. Lacy Edges: at bare minimum, a good smash burger patty will have some lacy edges or at least some irregularly shaped crispy edges.
2. American cheese: a good smash burger needs cheese to bind it broken parts. A very good smash burger has American cheese, which gives the perfect balance between cheesy goodness and non-dominating flavor, while also providing great melt to bind the broken pieces of your patties.
3. Broken patties and Isolated Islands: real smash burgers’ patties are broken and split into multiple pieces, otherwise it’s just “smooshed”. Truly smashed patties have many juicy islands and peaks and valleys, all with crispy edges.
4. Lips: great smash patties have one or two lips (thick edges left behind where the patty is not get completely smashed). These thick juicy pockets provide the perfect balance to the other crispy, lacy edges. (So called smash burger experts will tell you not to leave any lips on your patties. They are flat out wrong.)
5. 70/30 fat: the best smash burgers avoid the more common 80/20 ground beef, which is too lean. The only way to get crispy but juicy smashed patties is to use a fattier ground beef.
6. Make it a Double: the very best smash burgers have two stacked patties. Why? Because great ones are so smashed, so irregularly shaped, with so very thin lacy sides, and such thicker juicier sides, and and so held together with cheese, that at least two layers of burger patty are needed to make any sense of it at all. A single well-smashed burger just doesn’t work well.
7. Spatula Made: numbers 1, 2, 5, and 6 from above are possible with the regular dedicated “burger smashers” you’ll find at other smash burger joints. But to actually smash up burger patties in such a way that your left with broken patties and juicy pockets and thick juicy lips on some edges, you’re going to need a couple of heavy duty spatulas, some practice, and elbow grease.
Does beef tallow really make a difference when it comes to frying? Absolutely, with no doubt.
