This morning when I walked into the kitchen, I smelled charred bread and thought, “Okay, time to empty the crumbs out of the toaster” (because the kids don’t). When I turned it over to shake out the charred crumbs, a few half melted parts came out to 😮. So things are good here, LOL.

Many countries have been quarantined and parents are home with kids and don’t know what to do.
Now, is a good time to do some of the deep cleaning and organizing you have been putting off, -well, if you’re like most people.
Empty your kitchen counter and let the kids go to town with a scrubber sponge and a little bit of soap. Let them play with it, create shapes, enjoy the sensory sensation.
You can teach them to knit by making dishcloths. Most of the ones you buy in the supermarket create micro plastic. Yes, go back to the knitted ones your grandma made. You can use exact the color you want. Several colors for your different moods and changing weather and light. Different color families for different rooms in the house? Sunny yellow for the bathroom? Lime green for the kitchen? Plum for your living room? Blue for your dining room? What would you pick?

So, my husband bought a huge cast iron pan from Lodge, and I just had to try it. It was put to good use creating a red curry with fresh pineapple 🤤
Dice an onion and sautée it gently for a few minutes.
Added coarsely minced garlic for a few.
Dice a pineapple and add (not the core).
Pour in 2 cans of coconut milk, mix in a 5 teaspoons Thai Kitchen red curry paste.
Add carrots, broccoli, cauliflower and green peppers. Let it cook until veggies had softened. Garnished with salted, roasted cashews.
You can add lime juice at the end to brighten the flavor. Garnishing with cilantro is also a possibility (were just not fans).
Food is apparently important to Danes...
THE CLEANING HABIT THAT MAY BE MAKING YOUR HOUSE DIRTIER...
If you ever think, “I’ll just add a little more soap”, you might be doing yourself a disservice. More soap, means more sticky residue, which catches dirt.
A good tip, if your water still has foam/bubbles, it still has cleaning power.
If the deed is done and you have a sticky surface with a film on it, use water with vinegar to remove the soapy residue.
PASTA WITH MUSHROOMS, SPINACH, LEMON AND PINE NUTS
Proper Hand Washing Techniques:
1) Wet your hands
2) Put on soap and rub it around your hands for 20 seconds, -between fingers and on wrists. Don't forget your thumb. (20 seconds is long enough to sing Happy Birthday to you).
3) Rinse your hands
4) Dry them off in a dryer or with a dry (paper) towel.
Stay away from wet towels, as they can host bacteria and undo the good job you just did washing your hands. If you only have a wet towel available, you're probably better off not washing your hands.

Just now, my youngest asked me if I would teach her to make garlic sautéed chard, and of course I jumped at the opportunity.
It’s so easy.
Heat up your pan. We use a cast iron pan to add iron to our diet.
Pour 2 tablespoons olive oil on to heat on low heat (else you’ll burn the garlic).
Peel and mince your garlic.
Rinse your chard (or spinach).
If using chard cut the very ends off of the stems and discard.
Cut the stems into 1/2 pieces.
Add the garlic to the pan and swish it around.
Add the chard stems. Leave it on there to soften for a few minutes.
While it’s softening cut the chard leaves into smaller pieces (to your liking).
Add the leaves and ‘fold’ them on the pan every few minutes.
Don’t overcook! Season with salt and enjoy!
The greens with the olive oil is really good protection for your eyes 👀
Today, I take time to honor my stepdad’s passing.
He liked his red meat and potatoes. When I was a child we would swap food, so he got my meat and I got his veggies.
Soooo, What’s for dinner?
Easy, healthy and fast... Chicken Meatballs with oven baked Butternut Squash and Mashed Faketatoes.
You’ll need:
1 lb ground chicken (or ground turkey)
1 butternut squash
1 cauliflower
2 tblsp olive oil
2 tblsp butter
2-4 + 2-4 cloves garlic, minced
2 tsp dried thyme
Salt
Pepper
Set oven to 400F. Prep a sheet pan with foil/or baking paper (for easier cleaning).
Peel and cut butternut into 1/2” cubes, mix with 2 tbsp olive oil and minced garlic and a little salt.
Bake in oven for 25-30 mins.
While butternut bakes...
Bring a little bit of water to a boil in a small pot, and while you wait for that (we know a watched pit never boils), rinse and cut cauliflower into florets, then boil till tender.
While butternut bakes and cauliflower cooks...
Pre-heat skillet.
Mix ground chicken (or turkey) with the dried thyme and minced garlic, and some salt and a little pepper.
Add some olive oil to your skillet and fry the chicken (turkey) until internal temperature reaches 165F.
While butternut bakes and meatballs fry.... remove cauliflower from heat, add 2 tblsp butter and blend it smooth. (That is why you should only use a little bit of water, it helps make the faketatoes the right consistency).
Serve and enjoy!
If you want to make it even quicker, you can buy precut butternut and cauliflower.
You can even mix olive oil and garlic with butternut in the package.
What’s for dinner?
Every day, he same question comes up, “What’s for dinner?”
If you’re like me, it should preferably be easy, healthy and varied.
If you’re more like me, it comes to the forefront of your mind around 3 PM.
Solution:
Every day for a month, I wrote down why we had for dinner. If we have something different, I add it to the list. Now, if I don’t know what to make for dinner, I just look at my list and pick a meal.

LAUNDRY:
Help your washing machine stay clean, and keep bad smells at bay, by running your machine on hot, once in a while, -maybe when you're washing your cleaning rags :) This way you kill unwanted bacteria.
Don't add Chlorine (Clorox), as it works best in cold water (and it's hard on the environment).
LAUNDRY:
Is your washing machine smelly? You might be using too much detergent.
My front loader started smelling, even though I only used the recommended amount of detergent. I went online and searched for solutions and a washing machine repairman suggested I only use half the amount of detergent recommended by the manufacturer. They do after all have an interest in selling detergent, and would like for you to use as much as possible.
I tried it, and it worked! So I now use half the detergent, -my clothes get clean, my washer doesn't smell, I save money, I help the environment. Better than a KinderEgg.

Tip of the day
If you're washing ( be it dishes by hand, -the floor, or clothes) before you add more soap, stop and check if there are bubbles on the surface of the water. If you still have suds on the water, you still have washing power and you don't need to add any more soap.
After a long hiatus, due to health issues and a move, I am now ready to breathe life into LGB, again. I often get asked questions on Home Ec, Human Dietetics (fancy way of saying Nutrition), or come across some common misconceptions.

Handwashing is probably the easiest way to stay healthy during cold and flu season, -and so simple to do. Do you do it properly?
Wet your hands with clean, running water (warm or cold), turn off the tap, and apply soap.
Lather your hands by rubbing them together with the soap. Be sure to lather the backs of your hands, between your fingers, and under your nails.
Scrub your hands for at least 20 seconds. Need a timer? Hum the "Happy Birthday" song from beginning to end twice.
Rinse your hands well under clean, running water.
Dry your hands using a clean towel or air dry them.
