Fresh corn, onions, mozzarella + cream. We are going to use this filling in our empanadas today. The old school dish would use this filling and cook it in a corn husk (similar to a tamale).
REAL empanadas are sealed by hand with this traditional “repulgue” (crimp or fold). No machine can duplicate this!
