Ha, I've been busy lately. Since the loss of my brother back in April. I've paused and have taken a major time out! For me! I was the caregiver for my younger brother. I miss him so much! Diagnosed with leukemia Jan 24, passed April 24'. We're here now! Let's get me back. Stronger! BTW I'm 58 and I'm marking out to myself, everyone else does so it's my turn! I'm happy and sad at the same time. But I'm gonna brew this week. A summer pale ale. I've lost the weight to recalibrate! Good now! Many cheers! Beer...emmmm....beer! I'm smilin', something I haven't done in quite some time. Ready to brew!

Nothing really on my mind in particular, other than The STARS LOST! "M-F #@$@^&*s".
So I roamed out and had a few photo moments. Nice. After all the crazy N. Texas weather, the night was absolutely beautiful to be outside.

Leffe! I pretty much feature it in all my super tasty
food pairing because it just works every time. Super
crazy history of the famous Abbey. How crazy that
in 1776 it was declared property of the state. WW1
came along, all the copper kettles were melted for
ammunition.

This tasty Belgian blonde is amazing because it
has just the smallest amount of bitterness. It’s
delicate!!! The floral, spicy vanilla and cloves like
deliciousness that hits your nose and then your
tongue is insane, then you get that sweet maltiness.

Pair with my smoked pork from local Dallas One90
Smoked Meats and it’s crazy, but I love the sugar
free Kinder’s BBQ sauce out of Walnut Creek, CA.
(What? No!, not Texas!)

Happy St. Pat's Day! Hope you all found your pots of gold. I'm still hunting! Dreaming of Guinness Beer as I gave beer up for Lent, call me crazy. After the wait, how good is that Guinness gonna taste as the first sip? Cheers!

There’s so much I want to say about my my perfect solo Boca Raton Fla drink fest weekend, but I’ll keep it simple with my DT’s!

Delirium Tremens is a heavy blond beer of the tripel type and it re-ferments in the bottle. Interestingly, three different types of yeast are used in its production.

Delirium Tremens is widely available on draft, but its bottles are worth checking out. Instead of glass, Delirium Tremens bottles are made from Cologne-style ceramic, which contributes to the beer’s unique brand and image. The story goes that the first ceramic bottles were leftovers from a custom order, but today, they’re an integral part of the brand’s image!

Ahhhh super happy on vacation in Boca Raton. At six o clock, I like to slip into something more comfortable, like a drink. Ha

A yummy Hefeweizen paired perfectly with my delicious vegetable fried rice, salty sweetness was balanced by sweetness of the wheat.

(The German-style hefeweizen is straw to amber in color and brewed with at least 50 percent malted wheat. The aroma and flavor of a weissbier comes largely from the yeast and is decidedly fruity (banana) and phenolic (clove)).

I absolutely love gin, I think it's actually my most favorite spirit of all times. I love the botanical types predominately. So delicious, especially super small batch versions. The more floral in the olfactory way, the better! I love Ford's. It's my go to, always on hand, on deck. I got this rare very limited release for my birthday! You can read the particulars from the box, amazing! Truly! So frigin tasty, OMG! Wait for it, the proof... Sit down, or it will sit you down! LOL. Apparently it also made me turn into John Snow, bastard son, Game of Thrones. Highly recommend.

Hi everybody, hope you all enjoyed National Pizza Day! I did! LOL, of course I did. Pizza was a mushroom based pie. I love the "shrooms" all types...LOL! I really loved my Hefeweizen style beer to pair with my pizza. Turns out my pie, was spicy, almost too spicy (weird pepper) of which I didn't expect. So the clove and banana mouthfeel from my "Hefe" was the cooling effect. Was really a "by luck, default" beer selection based on the local availabilty. It hit the spot.

Fallout from Manhattan Beer Project here locally in Dallas, thank god it was on tap....to my rescue.....hmmm...so delicious. Easy drinking wheat beer with just enough bitterness to offset the malt sweetness, yet I seeked the sweetness to calm the heat of the peppers. So good and approachable beer. Look at the amazing SRM gold! Wow, greatness in color.

Hmmm...also "beer clean" glass for sure which aided in the overall presentation and enhanced the carboniation mouth feel. Wonderful!

Had an interesting spring bock from Saint Arnolds tonight to pair up with my homemade pizza with my salad that featured veggies from my countertop indoor garden.

Spring Bock typically available December - March. An authentic, copper colored, German-style Bock, celebrating the coming of spring. It's a big, deeply flavored lager which has been aged to create a smooth, malty taste with a hint of sweetness. A light addition of German hops balances the malt flavor. It balanced out the saltiness of my pizza and complimented the sweetness of my red bell peppers perfectly. Low alchohol, not hoppy, no adjuncts, nice attenuation and perfectly carbonated mouthfeel the SRM was on the money 17-22 range. I would score this beer high.

Part two..my dinner! Not a beer review but some grape juice. Ha! Let's begin. My inspiration earlier tonight was a tasty region Southern Rhone Valley in France. A delicious blend where the grapes get the love of the Mediterranean Sea, (along with the Tyrrhenian Sea and the Balearic Sea, but who's counting) Anyhow the inspiration was Mediterranean flavors for sure, but keeping it to the roots of the vines in this region of France. (see what I did there? LOL). Thus my homemade ravioli featuring a delicous mix of ground lamb, portabello mushrooms, asparagus, garlic and of course herbs de provence with my own tweek of lavender. Ummm....this was absolutely delicious.

Wow, it's definitely been a moment since my last post. When you love your day gig and your side gig is your passion, it's hard to find the time and social media these days is just so demanding, but none-the-less we do it. With that said, Part 1. The love of Boddingtons! Say no more. So tasty. OMG! The wait of the pour at home from the can, is the best part! Super Teaser. What an absolute perfect straw-golden bitter. The widget draft pour makes is so damn creamy! Crazy good. While making dinner tonight it was the perfect starter.

Well, tons of road rash, 6 broken ribs, a broken clavicle and super stretcher groin pull Jones later, finally home from Baylor Trauma room T2 and on the couch. Bring on my codine. It’s now 11:46p pretty damn sore, like I got hit by a car, oh wait, I did.

Just glad to be alive and the son of bitch also smashed my friend Todd Ward up too. He’s got 3 broken vertebrae.

We both will live to fight another day and thank god we had our helmets on. My head took a pretty good smash too.

Driver was getting on it on McKinney Ave of all places. We have many witnesses and video from chipotle of which the Dallas police now have too.

Hosted my tour of Belgium beers last night! Was absoultely fantastic. OMG! Insane!!!

Delirium Tremens - commonly known as the DT’s.
A rapid onset of confusion usually caused by withdrawal
from alcohol.

Or…Huyghe Brewery in East Flanders, Belgium since
1906. The flagship of a golden Belgian blond style ale.
Absolutely sparkling delicious. Slightly malty with a
nice touch of alcohol at 8.5 ABV, spicy nodes and
wonderful head. When you sip it, it feels like a shot
of alcohol is lighting your mouth on fire. But in reality
it’s just your tongue and palate warming up. Its super
round on the taste and if you never have had, please
find and enjoy. Definitely one of my top 5 Belgians.
Especially after a great ballpark experience and calming
my anxiety down after being around 38,500 people for
the first time. Our wonderful brand new ballpark for
our Texas Rangers, just opened, was amazing.

Modelo Especial, super well balanced taste
and light hop character with a crisp, clean finish.
Definitely nodes of orange blossom honey aroma with a hint
of herb. Simple international pilsner lager style beer. All day long pool beer.

Simple, water, Barley Malt, Non-malted Cereals
(due to mass production) and hops. Perfect pool beer!!!!

This is a typical Bavarian style lager that’s golden yellow in color, with a pleasant malty sweetness balanced by a little dryness. The particularly special taste of Benediktiner Hell is delicately effervescent, malty sweet with gentle notes of hops, notes of fruitiness and aromatic herbs. An intensely enjoyable taste! Really delicious. Definitely nodes of yellow apples, honey and ripe cereal grains.

This is a bottom fermented lager style ale. Helle in German means pale, standard light color beer on tap. Completely following the German purity law of 1516 Reinheitsgebot Law, all beer is made from hops, barley, water and later, yeast. A standardization was born.

Really effervescent in character, there’s definitely a malty sweetness and gentle notes of hops. An interesting mouthfeel and a pleasantly hoppy aftertaste. Fruity notes of apples and hints aromatic mountain herbs for sure. May the 4th be with you, Bavarian style!

An amazing pairing. Grilled duck breasts with my awesome made from scratch orange chimichurri sauce. Was absolutely perfect with a true Belgian witbier. The moderate malty sweetness of the beer style really balanced out the intense citrus and onion from the green sauce along with the protein fats from the duck breasts. Super perfumy coriander, herbal, spicy, peppery nodes were fantastic and popped the two side dish I also made. Grilled Italian roman tomatoes that marinated the night before in a balsmic vinegar, rosemary, basil sea salt concoction, the asparagus as well with EVO and lemon zest. The great head retention was spot on with the floral, fruity and sweet aromas blending absolutely perfect.
