Orejas bring delight to many because of their unique crunch and flakiness. A single bite of one and you can feel the layers crumble and erode into your mouth, almost melting as if they were butter. These types of pastries are called puff pastries, and while no one knows where the first "oreja" came from, we do know where its roots lie.

Thanks to French, we have the oreja, or as it is originally called, the palmier. Sometime during the 20th century, a French baker created the now famous palmier. It is believed that this sort of pastry, a puff pastry, is adopted from the Middle East's Filo or Phyllo. Filo is a very thin dough prepared by stretching dough into paper thin sheets several times in order to make soft crunchy thin sheets in the pastry that is made. A notable pastry made with this method is Baklava.

Thus, thanks to innovations in pastry due to the Middle East and France, we are able to adopt such a beautiful pastry into our gastronomy.

I'm extremely excited as I have put this project off for months. Now I can finally share it to all yall amazing people!
We have a store and a stories section where I'll be writing more blog style posts where I'll be sharing thoughts, aspirations, and many other things!
Let us know of any issues and we will try our best to resolve them!

Like everything in life we must lay a foundation. Everything has a starting point, everything has a beginning.

When I begin making bread, I must first use flour to lay my foundation. This first step starts it all. But I like to imagine of everyone else's beginning and how that helped create mine.

I believe it is a blessing to know that farmers laid their foundations so that I may be able to use my flour. I am blessed to know that artisans of the past laid the foundations of what is possible today in our society. The creation of many technologies and many idea's beginnings helped all of us.

I think even further and see that in the beginning, God created the heavens and the earth. And when their was no form to the world we now know as Earth, God said, "Let there be light." And that's where our story begins.

And so, every day is a blessing, every interaction is a blessing, and I believe we are all truly blessed to be part of everything (in a way). For everything has a beginning, that eventually finds its way into our lives.

And we couldnโ€™t be more grateful that you stayed with us and have decided to join us on our journey. That is why we want to appreciate you for 2 great milestones in our trek. Firstly, we broke into 100 followers! Every person here adds to my heart and mind, a memory of worth, and appreciation. Every interaction is cherished and only propels me to continue going, even when I feel at my lowest. So, thank you to each and every one, for being that smile, that compliment, for those conversations, for the many bites taken and many mmmmโ€™s made. Through these small moments, my resolve becomes strengthened, and for that very fact, I cherish and appreciate you.ย 

Secondly, day by day, week by week, and month by month, Binda Bakery maintained itself and furthermore, it flourished. Like a flower, Binda Bakery flourished only through the nurturing and support of many people. With my family and loved ones, I was able to accomplish many things that were seen as a daunting task. And with each order made, I learned and learned. Throughout this entire year, it is amazing to see a dream slowly materialize, and not only that, but to see that dream being supported by everyone that also believes in oneโ€™s work and aspirations. Had I given up any sooner, I would have not been able to grow as a person and I would not have been able to experience so many things and meet so many new people.ย 

Binda Bakery however is not just my experience. It is your experience. You experienced the evolution and contributed to the growth. From seeing the very first breads and their respective packaging, to seeing our presence grow, from transitioning to markets from the church parking lot, and to seeing every little upgrade in what Binda Bakery is.

One of the realities of working with dough is that it sticks to everything, especially (of course) your hands. In a way, one could say that it is a mark of an artisan, to get one's hands "dirty." I would say that it is proof that one is invested in their work. For me, when I see my hands covered in dough and flour dust, I always feel a little pride for the work that I do. Of course, cleaning sticky dough off everything is the flip side to that! ๐Ÿ˜‚๐Ÿ˜… In the end, just as a potter has their hands full of clay, a stone polisher and their hands full of dust, I see myself as a baker with my hands full of dough.

(These are co**ha dough balls btw! They are left to rise 2x before finally being introduced to the oven!)

Meet "abuelita!" We have been raising chickens for over a year now! And abuelita has been a very good mama, hence her name! ALL of our pastries are made with organic eggs raised right here at home, with our chickens being allowed to roam freely and happily! All of our chickens are fed organic feed and we can tell the difference in the richness of our eggs compared to store bought! Thank you pollos!

Who is Binda Bakery?

Why who? And why not what? Because there is more to Binda than just the name.

Who We Are

Firstly, let me introduce myself. My name is Kenneth. I like simple things like Minecraft, the smell of books, and good food. I love waking up early, and smelling the warm aroma of a freshly baked bread. The freshness just entices me to take a huge bite out of one of my breads (I always save some for myself simply because they are irresistible).

My biggest supporters and members of Binda Bakery would be my mother, my girlfriend, my brother, and my cousin. Every day my mother and girlfriend motivate me to push forward with this initiative I call Binda Bakery. It warms my heart to see their enthusiasm for me and their patience through all of the moments I trip in this path. The late nights, the early mornings, the many times in the beginning where I felt at my lowest for messing up my breads. I also would like to thank my brother and cousin. They come and help me with the heavy lifting, with the rushed hours before the market, and with the market itself (along with my mother and girlfriend of course).

Thanks y'all, for everything.

But that still leaves the the question who Binda Bakery is.

And to that I answer, us. We are Binda Bakery. Me, my family, my friends, and every single one of y'all are instrumental to Binda Bakery. Every bread made is made for someone, and I will tell you, I am extremely fortunate and gratified to have even a single person try Binda Bakery. I can not begin to describe how amazing it is to me to see and hear the satisfaction of someone trying a bread sample, or a cookie, co**ha, or oreja. Every experience, every memory, and every interaction and person makes up Binda Bakery. That is who we are.
