SEASONAL TART
Our play on a pumpkin pie
Pumpkin Mousse tart with a base of Dulce cream cheese, finished off with dollops of whip cream, matcha powder and chopped pistachios
At the top of our tea tower are two bold and very summery (if that's a word) pastries.
First, is a classic summer berry tart.
We take blueberries and strawberries and cool them down with sugar to make a preserve. After filling the pΓ’te sucrΓ©e shells with the preserves we finish them with blueberry butter cream, sliced strawberry and toasted buckwheat for a little crunch.
Then, we have created a "beehive".
We have taken a meringue cookie, slightly torched it and filled it with a whipped cream that has been mounted with honey and honey bee pollen. Lastly we finish them with yellow buttercream to represent busy bee's.
Both are strong representations of just a few things that say summer time to us!
Sale el Sol afternoon tea menu is around for just a little longer so come by and enjoy a summer break with us at Potpourri Boulangerie.
Our afternoon tea tower is an all veggie based tower. We do this for sustainability reasons. We believe that as chefs and food handlers we are obligated to not only create with what earth gives us but take care of earth in return. π
Not only is it our goal to help build a more sustainable world through food but we love showing off what we can do with vegetables!
Yes, we still do use cheeses, milks and butters but this is a step towards the future in what we believe all restaurants should participate in if possible.
We hope you come by and see the maic we can do with vegetables and minimal animal products.
We love the Earth and Earth loves us. So let's all do our part. πβ₯οΈπ
What happens when you take a chef bit and raised in south Dallas who loves Montreal Bagels?
An Oak Cliff bagel!
One of our hidden gems at Potpourri Boulangerie, is that we make bagels derived from Montreal roots. That is created from a south Dallas chef. Come by sometime and try it out!
I'm so honored from the praise and love everyone gives us for our afternoon tea service, tea drinks and pastries.
But one thing that not many people know until they get to the shop is that we make all of our breads for the tea service and to sell to the public, I think it's a bit of a nice surprise for our guests when they get here.
I gotta say bread making has grown very dear to my heart over the years as I continue to increase my skill and learn new things everyday.
When I make bread, it takes me back in time to an ancient place full of techniques just being recorded.
More importantly it takes me to my Guitas (grandmother) house and watching her use nothing but touch, sight, taste and smell to create breads that I carry in my soul forever. β₯οΈ
Now that, is technique and skill.
So swing by for some breads at our little yellow tea house in Oak Cliff, I'm sure you'll be pleasantly surprised
