San Clemente, Ca 92673
I am sharing my post from yesterday.
George Weinand is rejoicing in heaven. We miss him more than words can say. His legacy of natural medicine continues with his grandson, Jeff Erickson and I. May the gentle, effective therapies he blessed many with, including his 8 great grand babies, continue for generations to come.
“For I shall restore health unto thee.” Jeremiah 30:17
I found his birth certificate with his baby footprints today with this verse. He left his earthly home on Jeremiah Drive for true restored health in heaven today. Everywhere he went, he left footprints of laughter and unconditional love. I am so lucky to be his daughter.
“How beautiful are the feet of them that preach the gospel of peace.” Romans 10:15
I am thankful for my dad. In life and death he was the best. He really could say today that it was, “the best day of my life.”
Drinking two or more diet sodas a day increases risk of heart attack: study
By Lizzie Perry, The Sun February 15, 2019 | 1:03am |
Two or more artificially sweetened drinks a day ups the risk of stroke by a quarter and heart disease by a third, new findings show.
And compared with people who never touch them, the risk of early death is 16 percent higher for diet drink guzzlers.
Diet drinks are NOT harmless’
Scientists warned their findings should serve as a warning to those on diets.
Dr. Yasmin Mossavar-Rahmani, lead author of the study at the Albert Einstein College of Medicine in the Bronx, said: “Many well-meaning people, especially those who are overweight or obese, drink low-calorie sweetened drinks to cut calories in their diet.
“Our research and other observational studies have shown that artificially sweetened beverages may not be harmless and high consumption is associated with a higher risk of stroke and heart disease.”
Heart disease is when the blood vessels that supply the heart with blood narrow, increasing the risk of a heart attack, angina and stroke.
A heart attack is when the artery is blocked, preventing blood from getting through — and an ischemic stroke is when a blood vessel in the brain becomes blocked in a similar way.
Obese women at even greater risk
The new findings are based on a big study of women and show some groups are at even greater risk, with those drinking two or more diet drinks a day who were also obese having more than double the stroke risk.
And African-American women also had a higher risk of stroke.
Mossavar-Rahmani did stress that while their findings suggest a link, they couldn’t prove diet drinks cause stroke and heart problems.
The research, published in the journal Stroke, included data from 81,714 post-menopausal women (who were ages 50 to 79 at the start of the study) and who were tracked for an average of 12 years.
One serving of diet drink was regarded as 12 ounces.
Mossavar-Rahmani said the study had not looked at individual artificial sweeteners, saying: “We don’t know specifically what types of artificially sweetened beverages they were consuming, so we don’t know which artificial sweeteners may be harmful and which may be harmless.”
Cutting calories? Drink water instead
The American Heart Association has recently published a science advisory that found there was inadequate scientific research to conclude that low-calorie sweetened beverages do or do not affect the risk of heart disease and stroke.
But it states that water is the best choice for a no-calorie drink.
Dr. Rachel Johnson, professor of nutrition emeritus at the University of Vermont, said: “Unfortunately, current research simply does not provide enough evidence to distinguish between the effects of different low-calorie sweeteners on heart and brain health.
“This study adds to the evidence that limiting use of diet beverages is the most prudent thing to do for your health.”
There is a growing body of evidence that does suggest diet drinks are not good for your health.
Last year, scientists from Israel and Singapore warned that six artificial sweeteners in the drinks are toxic to our gut bacteria — which could have a link to a range of diseases from obesity to bowel disease, even Alzheimer’s.
Another study warned the drinks can increase the risk of diabetes.
Sugar,,,More addictive than co***ne!
FOOD FROM CHINA...INTERESTING
You probably know all about this already but just in case......horrid though
Smithfield Farms, the largest pork producing farm in the USA was sold
in September to China with the unanimous support of its stockholders!!
The hogs will still be raised here, but slaughtered and packaged for
sale there before being sent back here. This includes labels of
ï· Morrell
ï· Eckrich
ï· Krakus
ï· Cudahy
ï· Premium Hams
ï· Cook's
ï· Gwaltney
The same with many chickens. They can now be shipped there, but when
they come back all that needs to be labeled is that they WERE RAISED
IN THE USA. Not that they were processed in China !!!
Our great FDA at work again. The chickens will be all processed and
most sold to fast food restaurants for sandwiches, along with schools
and supermarkets. The China slaughter and processing are not nearly
equal to the requirements here.
*BAD FOOD*
We recently learned that Starkist Tuna is now owned by Korea, and is
in big conflict with the U.S.concerning quality, safety, and records,
which Korea refuses to produce.
Read several articles on Google about this, and even one that was
defending the eating of tilapia said to avoid the fish that came from
China?
Also, I had just returned home from buying Albertson's 4-day special
of 4 bags of frozen tilapia for the price of one? Sure enough, on the
top of the bags, it read "farm raised", and on the bottom in small
print it said, “China". Read all the way to the end...
Recently a Food inspector on TV...said he had lived overseas and he
had seen the filthy conditions their foods are raised and processed
in. It is enough to make you throw up. Some foreign workers have to
wear masks as they work in these places, because the food is so rotten
and filthy, it makes them want to throw up. Many of their fish on
Fish Farms are fed raw sewage daily. He said he has seen so much
filth throughout their food growing and processing that he would
"never" eat any of it. They raise this filth, put some food coloring
and some flavorings on it, then they ship it to the USA & Canada for
YOU to consume and feed to YOUR families. They have no Food & Safety
Inspectors. They ship it to you to buy and poison your families and
friends.
Imported food we eat and the junk we buy:
Green Giant frozen vegetables are from China,
and so are most of Europe's Best.
Arctic Gardens are OK so is Birdseye.
*Never buy the grocery store garlic unless it is clearly marked from
USA or Canada*, the other stuff is grown in people p**p (even worse
than chicken p**p). China is the largest producer of garlic in the
world; U.S. is next.
*Buy only local honey*, much honey is shipped in huge containers from
China and re-packed here.
Cold-FX is grown and packed in China and is full of f***l bacteria.
Doesn't work anyway, big scam.
If the country of origin is not clearly marked, beware
If produce, ask an employee.
Watch out for packages which state "prepared for", "packed by" or
"imported by". We don't understand the lack of mandatory labeling,
especially the produce.
The country of origin should be clearly shown on the item in the store.
Go to the local farmers' markets in season and keep a wary eye open
the rest of the year.
Please read this very carefully, and read to the very bottom. It's
important for all of us.
How is it possible to ship food from China cheaper than having it
produced in the U. S. or Canada?
FOR EXAMPLE THE "OUR FAMILY" BRAND OF MANDARIN ORANGES SAYS RIGHT ON THE CAN 'FROM CHINA '. - SO, for a FEW MORE CENTS, BUY THE *LIBERTY* BRAND.
*GOLD BRAND or DOLE is from CALIFORNIA*.
Beware, Costco sells canned peaches and pears in a plastic jar that come from China ..
ALL "HIGH LINER" AND MOST OTHER FROZEN FISH PRODUCTS COME FROM CHINA OR INDONESIA. THE PACKAGE MAY SAY "PACIFIC SALMON" ON THE FRONT, BUT LOOK FOR THE SMALL PRINT. MOST OF THESE PRODUCTS COME FROM FISH FARMS
IN THE ORIENT WHERE THERE ARE NO REGULATIONS ON WHAT IS FED TO THESE FISH.
*Recently The Montreal Gazette had an article* by the Canadian
Government on how Chinese feed the fish: They suspend chicken wire
crates over the fish ponds, and the fish feed on chicken s..t.
If you search the internet about what the Chinese feed their fish,
you'll be alarmed; eg: growth hormones, expired anti- biotic from
humans? Never buy any type of fish or shellfish that comes from these
countries
ï· Vietnam
ï· China
ï· Philippines
Check this out personally.
Steinfeld's Pickles are made in India - just as bad!
Another example is in canned mushrooms. No-Name brand came from Indonesia.
Also check those little fruit cups. They used to be made in Canada in
the Niagara region until about 2 years ago. They are now packaged in
China. Most sold in Aldi stores.
While the Chinese export inferior and even toxic products, dangerous
toys, and goods to be sold in North American markets, the media wrings
its hands! Yet, 70% of North Americans believe that the trading
privileges afforded to the Chinese should be suspended.
Well, duh ! Why do you need the government to suspend trading privileges?
SIMPLY DO IT YOURSELF, CANADA and the U.S.
Simply look on the bottom of every product you buy, and if it says
'Made in China' or 'PRC' (and that now includes Hong Kong ), simply
choose another product, or none at all. You will be amazed at how
dependent you are on Chinese products, and you will be equally amazed
at what you can do without.
THINK ABOUT THIS
If 200 million North Americans refuse to buy just $20 each of Chinese
goods, that's a billion dollar trade imbalance resolved in our favor fast! The downside? Some Canadian/American businesses will feel a temporary pinch from having foreign stockpiles of inventory.
Just one month of trading losses will hit the Chinese for 8% of their
North American exports. Then they will at least have to ask
themselves if the benefits of their arrogance and lawlessness are
worth it.
Send this to everybody you know. Let's show them that we are
intelligent, and NOBODY can take us for granted *Start reading labels
more closely and buy something else even if it cost a few cents more*.

Acid-Blockers – Not a Free Ride
David Perlmutter, MD
Stomach acid is a wonderful thing. It enhances the breakdown of our food, turns on digestive enzymes, allows us to absorb vitamin B12, and helps control pH levels for the entirety of the digestive system.
And yet, drugs called proton-pump inhibitors (PPIs), which act to reduce stomach acid, are among the most popular medications prescribed, as well as over-the-counter drugs sold and used in America today.
The list of these PPIs is extensive and includes some recognizable players:
Nexium, Dexilant, Prilosec, Pepcid, Zegarid, Vimova, Protonix, AcipHex, Prevacid.
Just turn on the television and you’ll soon see an ad extolling the virtues of this or that acid-blocking drug, with the underlying notion being that somehow “acid” is a bad thing and we should all do our best to get rid of it.
But there’s another side of the story that you should know. The Food and Drug Administration (FDA) recently issued a warning to healthcare providers that the use of PPIs can cause a potentially dangerous decline in serum magnesium levels.
This is important because low magnesium levels are associated with a variety of health issues including heart rhythm abnormalities, migraine headache, seizures, chronic fatigue, anxiety, depression, constipation, asthma, hypertension, and osteoporosis (learn more about the importance of magnesium).
From Leigh Erin Connealy, MD What’s Hiding in Your Soap?
One of the main ways our body acquires nutrients, other than eating, is directly through the skin. Our skin is our largest organ-22 square feet on average and 60 percent of the products you put on it are absorbed into the bloodstream. The skin allows us to absorb vitamins and minerals, but, unfortunately, it absorbs harmful chemicals as well.
Four chemicals to watch out for when buying anything you plan on putting on your skin:
• 1) Fragrance: If the ingredient is vague, it’s probably hiding something. “Fragrance” could actually be a cocktail of chemicals and you’d never know it. Most of the time synthetic chemicals and cancer-causing toxins (phthalates, used to make fragrances last longer) are hiding under one misleading term. “Trade Secrets” So buyers beware.
• 2) Parabens: These ingredients are estrogen mimickers-meaning that once applied to the skin, they enter the bloodstream and the body mistakes them for estrogen. Abnormally high amounts of estrogen reacts in various ways: decreasing muscle mass, increasing fat deposits, causing early onset of puberty and causing reproductive difficulties in both men and women.
• 3) Sulfates: These chemicals are used to produce lather and bubble in soap. Common sulfates are SLS (sodium lauryl sulfate) and SLES (sodium laureth sulfate). Sulfates strip the skin of its natural oils. They are also irritants for people with sensitive skin or eczema.
• 4) Triclosan: This chemical is most often found in antibacterial soap. Studies have found that triclosan promotes the growth of bacteria resistant to antibiotic cleansers. Dioxins can have serious effects on the endocrine system and negatively affect thyroid function. Dioxin is the primary toxic component of Agent Orange!
Think about this if we are washing our bodies with soap that contains harmful ingredients every day, this adds up over a lifetime of wreaking havoc on our health.
Daily I tell my patients one way of improving your overall health is by choosing soap, laundry detergents, or anything you put on your bodies to be free of these four hormone-disrupting toxic additives. Make the switch today and your skin, body, and health will be thanking you!
Most of the almonds sold in the U.S. have been fumigated with propylene oxide, a chemical that even the CDC has admitted causes cancer.
There is no doubt that almonds were once one of the healthiest foods on Earth; there are many health benefits of almonds. But before you buy almonds today, here is something you should know: most of the almonds sold in the U.S. have been fumigated with propylene oxide, a chemical that even the CDC has admitted causes cancer.
In 2007, it became illegal for raw almonds to be sold in the U.S. What brought about this law was an outbreak of Salmonella in Canada that was traced back to an almond grower in California. The California Department of Health Services stepped in to help this grower increase the safety of his almonds, and that appeared to be the end of it.
But a second surprising outbreak of Salmonella occurred shortly after, and several government agencies got together to mandate treatment so there would be no more Salmonella outbreaks. If you are thinking how strange it is that Salmonella would occur in something as dry as almonds, you are not alone.
To achieve a dramatic reduction of salmonella, almonds had to be treated in one of two ways:
• Exposure to heat sufficient to raise the temperature to 200 degrees
• Insertion of the kernels into a closed chamber to be fumigated with propylene oxide gas
This all happened very quickly, and many small and mid sized almond growers were pushed out of business by the cost of compliance. The result is that the once-thriving almond industry made up of many small growers has been diverted to big corporate almond producers.
As it played out, almonds sold as ‘organic’ are generally treated with the heat process to achieve a kernel temperature of 200 degrees. Those not labeled as ‘organic’ are fumigated with propylene oxide gas, as a general rule.
This means that all almonds sold in the U.S. have been treated in one of these ways and thus have lost much of their life-enhancing properties. The only potential exceptions are almonds shipped from another country, and almonds sold in small amounts directly from the grower at local markets or roadside stands.
A colleague of mine has been treating former Denver Broncos in her Denver office using EEG Neurofeedback that we also use in our office. The following video was reported on Denver TV yesterday.
Former Broncos Seek Concussion Relief Through Neurofeedback About a dozen former Denver Broncos, some from the Orange Crush era, are taking part in a research study they say is helping them recover from post-concussion symptoms and traumatic brain injuries. They believe those injuries were suffered during their playing days.
Toxic Foods
Processed foods are loaded with additives, preservatives, artificial sweeteners, flavors and trans-fats that are toxic to your body.
Most meat that we buy at the grocery store is high in toxins as most farm animals eat toxic food that accumulates toxins in their bodies. Naturally raised and organic meat is less inflammatory to the body, as the animals are fed a more natural diet and have higher levels of anti-inflammatory omega-3 fatty acids.
Even fruits and vegetables can be covered in chemicals, such as hormone-disrupting pesticides. Choose fresh, organic produce, preferably from a local farmer.
Another major factor is not eating enough fruits and vegetables, the foods we were meant to eat. Eating too much meat, dairy and grains taxes the body and leads to inflammation.
Lastly, avoid anything that is GMO or Genetically Modified Food. Think about this, every study funded by the companies that produce GMO food say it’s totally safe, but every study that is independently funded says that GMOs are extremely toxic.
Correct time to drink water... Very Important. From A Cardiac Specialist!
Drinking water at a certain time maximizes its effectiveness on the body:
2 glasses of water after waking up - helps activate internal organs
1 glass of water 30 minutes before a meal - helps digestion
1 glass of water before taking a bath - helps lower blood pressure (who knew???)
1 glass of water before going to bed - avoids stroke or heart attack (good to know!) water at bed time will also help prevent night time leg cramps. Your leg muscles are seeking hydration when they cramp.
Healing Oils of the Bible by David Stewart Ph.D
The body is composed of some 100 trillion cells each with a strand of DNA capable of storing up to six gigabytes of memory that can replicate RNA memory strands without limit. The emotional brain can delegate any place in your body to store a feeling or an emotional memory.
The amygdala is the central headquarters of the limbic system, which manages your storage and filing system for all your emotional experiences. That part of the brain does not understand words and cannot be communicated to with spoken or written language. It responds only to smell. Hence, essential oils provide a powerful means to contact that non-verbal portion of our brains that stores our feelings and emotions.
This is way when you smell apple pie, for example, you may find yourself back in your grandmother’s kitchen as a little child. That is why the smell of frankincense brings a Catholic back to the sanctuary where they went to church and inhaled that fragrance.
When an essential oil penetrates into the central brain, it makes it possible for us to access forgotten memories of emotions with which we need to deal. Stored emotions can make us sick. It they are stored in the stomach, you can have stomach ailments. If in the pancreas, you can have diabetes. If in the liver, you can have many problems. If in the thyroid or other endocrine glands, you will have hormonal problems. If in the joints, you can have arthritis.
Stored emotions can cause cancer, too, which is why women, whose breasts are their physical expression of love and nurturing, often have breast cancer. In such cases, some emotional trauma has been repressed and stored in cellular memory that blocks a woman’s natural ability to let love flow towards others and or towards themselves.
Hence, when essential oils trigger an emotionally upsetting memory, it gives us an opportunity to deal with that emotion and release it from our systems, thereby affecting a healing. Sometimes this healing is instantaneous with the release of the emotion and sometimes it takes longer. In either case, a healing results.
ADHD – What Does the Science Say?
From David Perlmutter, MD
ADHD (attention deficit hyperactivity disorder) is a diagnosis that has now been “given” to more than 6.5 million American children. And if that statistic is not compelling enough, please understand that about two thirds of these children are actually receiving mind altering medications to “treat” the disorder. But there are certainly other considerations that parents should make prior to engaging these potentially health threatening medications.
In the well-respected, peer reviewed medical Journal Pediatrics, doctors J. Gordon Millichap and Michelle M. Yee, published a report entitled “The Diet Factor in Attention-Deficit/Hyperactivity Disorder.” In this comprehensive review, the authors reviewed a variety of dietary issues including omega-3 fatty acids, dietary sugar, allergic considerations, iron, and zinc, and produced a very provocative report indicating, at the end of the day, that we are probably significantly missing the boat in terms of what is being done to American children with the mistaken notion that treating them with aggressive pharmaceuticals is going to help them perform and reach academic goals.
Simple ideas like iron deficiency, and zinc deficiency, and how they relate to ADHD are reviewed in the publication with an emphasis on the idea that these are simple treatable issues that can have a profound effect on the diagnosis in question. Similarly, the important role of omega-3 fatty acids is reviewed.
The authors conclude, “Supplemental diet therapy is simple, relatively inexpensive, and more acceptable to patient and parent. Public education regarding a healthy diet pattern and lifestyle to prevent or control ADHD may have greater long-term success.”
And to be sure, I am in complete agreement with their conclusion. Basically, what they have told us is that nutrition plays a role in how the brain works, and in this case specifically, nutrition plays a fundamental role in allowing children to maintain composure and vigilance and that should help them in terms of acquiring academic information.
As I have stated many times, it is, at least in my opinion, critically important to practice medicine under the dictum of primum non nocere – above all do no harm. And in this case, please recognize that this information is written in a journal that is possibly one of the most well-respected pediatric journals in the country, and likely read by most pediatricians.
FDA Pushing To Regulate Homeopathy Out of Existence.
Dr. Martha Grout, MD, MD(H)
Why is there a sudden push by the FDA to label homeopathic remedies as dangerous? Why is there a need to regulate substances that have been used for hundreds of years with out any issues?
The FDA has published two documents recently, which suggest that WAR is being declared on the profession of homeopathic medicine – or at least on the manufacture of homeopathic remedies, which comes to the same thing in the end. What is a homeopath without homeopathic remedies?
Homeopathic remedies have been in use since they were first introduced to the United States in 1925 by Dr. Hans Burch Gram. Textbooks by the founder of Homeopathy, Samuel Hahnemann, were available, but only in German until 1835. The practice of homeopathy spread throughout the USA because doctors found it to be so much more effective in their complex and unresolved medical cases. Homeopathic medicines have been accepted in the Homeopathic Pharmacopeia of the United States (HPUS) and regulated under a document called CPG Sec. 400.400, Conditions Under Which Homeopathic Drugs May be Marketed. These conditions have been unchanged for the last 40 years.
Why, suddenly now, are we wanting to change the manufacture of these remedies? Why such a push to label homeopathic remedies dangerous, when they have been around for over 200 years without any problems?
Health of the gut can play a key role in neurological disease, like autism.
In a world where autism rates have spiked nearly 150-fold, celebrities blame vaccines and massive amounts of money are spent seeking genetic causes and solutions.
So, it’s not everyday a scientist gets a world-class audience for a promising theory some were quick to dismiss as heretical, but that’s precisely what’s happened to a London doctor.
Dr. Derrick MacFabe was one of just 10 scientists recently invited to a prestigious Nobel forum in Sweden to explain research that suggests that much of what ails us rests in us — our digestive tracts are home to a huge number and variety of single-cell organisms so tiny, millions can fit in the eye of a needle.
Called microbes, they out-number our own cells in the gut by 10 to one and form a community of bugs, called a microbiome, that’s led to an explosion of research.
“We want to let suffering families know there is real scientific progress in this field, and gut microbes are becoming the game changer in this devastating condition,” MacFabe said.
It’s not that gut bugs are bad. For, millions of years, they played a helpful role in our health.
But changes in the past century have altered the microbial balance as societies relied too heavily on antibiotics, disinfectants, C-section deliveries and a diet of refined carbohydrates. Those changes replace inner gardens of helpful bacteria with a harmful mix that makes compounds that in excess can damage the digestive system, brain, immune system, and the way cells metabolize energy.
The damage is likely worse in babies whose brains and immune systems are developing, MacFabe says. But the damage also occurs throughout life.
Studies that followed kids’ gut microbes over many years could predict later health or disease, he said.
Others at the Nobel forum linked changes in gut bacteria to the rise in obesity, some cancers, immunological disorders and neurodevelopmental conditions beyond autism.
They discussed upcoming clinical trials to “restore” the damaged microbiome to improve health.
MacFabe’s approach is buttressed by a decade of animal and clinical studies. Rats showed symptoms of autism disorder when injected with the same fatty acid made in excess by bacteria associated with autism. That abnormal fatty acid might help doctors to use blood tests to diagnose and treat the condition early. His work has been given a boost by new technologies that help scientists identify the 3,000 or so types of bacteria and their compounds found in the human gut.
But while science is MacFabe’s pursuit, he’s motivated by the stories of those who suffer. They include the daughter of London entrepreneur David Patchell-Evans, who donated $5 million to create the Kilee Patchell-Evans Autism Research Group at Western University.
Autism: Not just genetics
Bacteria in the gut may play a leading role in the disorder.
Traditional genetic studies account for only 5% to 25% of cases.
Many genes associated with it are turned on or off by compounds produced by gut bacteria.
Identical twins often develop differing degrees of autism that could be caused by the environment.
Growth in autism has been mirrored by growing use of antibiotics, disinfectants and changes in diet.
When people move from less developed countries to developed nations, autism rates rise, and the same increases occur in underdeveloped countries introduced to Western medicine and diets
Those with autism often have digestive struggles, including unique bacteria, and their behavioural and gut symptoms often change with antibiotic use or changes in diet.
WHAT IS GLUTEN?
Gluten is a sticky protein that is found in certain grains such as wheat, rye, barley, spelt, and kamut. Since it is so sticky, it acts like a glue to bind ingredients together. Gluten holds together the flour which makes bread. Gluten stops sauces, gravies, and soups from curdling and gives a smooth texture to cheese spread and dips, dressings, margarines, sweets, canned meats, mustard, and almost all packaged and processed foods. It has therefore been in the interest of the manufacturers to use it extensively and in the interest of the growers to increase the gluten content of grains.
WHAT IS GLUTEN INTOLERANCE?
Gluten intolerance is when we experience symptoms after eating gluten-containing foods such as wheat. As our diet depends mainly on wheat and wheat by-products, we are seeing a higher incidence of intolerance to the wheat protein gluten. What we know from recent research is that there is a spectrum of disorders associated with gluten – from an inability to digest it to a full diagnosis of celiac disease. Celiac disease is an autoimmune disease associated with gluten intolerance. It occurs in genetically predisposed people of all ages from middle infancy on up.
Issues associated with gluten intolerance and celiac disease include:
Depression Constantly getting sick
Irritable bowel syndrome Chest pain
Growth issues Dairy intolerance
Constipation and/or diarrhea Sugar cravings
Hives Other food reactions
Brain fog Bone pain
Nausea and vomiting
Although some people don’t have any symptoms, they can still have a diagnosis of celiac disease. For celiacs, gluten represents a particular problem as it damages the internal lining of their digestive tracts. For those with simple gluten intolerance, there could also be damage, but not as severe.

Substitutions for wheat flour
The following are substitutions for 1 cup of wheat flour:
1 cup of gluten-free mix
7/8 cup of rice flour (white, milled from polished white rice not very nutritious, brown rice flour milled from unpolished brown rice, higher in nutrient value than white rice flour. Brown rice flour can be used
in breads, muffins, and cookies. It has a shorter shelf life and tends to become stronger as it ages)
5/8 cup potato starch flour (made from potatoes, fine white flour used in gluten-free mixes)
1 cup coconut flour (contains the fiber from the coconut meat after most of the oil has been extracted)
1 cup millet flour (millet and teff are grains in the same family as corn, rice and sorghum)
Quinoa flour seeds come from a plant in a family related to spinach and beets. These seeds grow with a bitter coating, so always buy debittered flour. It is high in protein, calcium and iron, and is higher in unsaturated fats and lower in carbohydrates than other flours.
Amaranth, Quinoa, Millet and Teff these four flours, more exotic and less well known, have been accepted in Canada for years as gluten-free. Most celiac groups in the US are coming to accept the fact that they are not botanically connected to the gluten-containing grains.
