This dish came to be from my travels in Finland. They have a classic pastry which is very similar. It’s a blueberry pie. So this is my take on it. I also wanted to incorporate flavors that go well with blueberry and which are very much Finnish. So on each corner you have a different thing to try: sea buckthorn which is a berry that grows in Finland, candied fennel…flavor similar to licorice and in Helsinki they are known for there black licorice, and finally lemon thyme which is a variety of thyme with an lemon accent to it.

Getting the Rye Starter ready for next weeks savory item. This will be replacing the Venison Pave. Why am I posting this picture about rye flour? Simply because it’s amazing that I get to keep supporting local farmers, growers, and now millers (if that’s a word). Super excited about trying there flours, grains, seeds, and legumes out in a few dishes.
2 interesting notes:
1) ever since I started this project 6 years ago with testing ideas I’ve always wanted to work with local flours because they tend to have a better flavor and are more nutritious. So when I saw them the other day Freshfarm I knew I had to get in contact with them. Excited to try there products
2) Some people from the market, home, at work, and even grocery shopping ask me why do I opt to make everything from scratch. One reason, is better control of my food and being able to change and adjust recipes as needed. Second it’s to keep some authenticity to the nation from which the dish is centered. A great example is this danish rye bread. This recipe was taken when we were in Finland and looking through a Finnish cookbook in a local library. And thirdly because I wanna learn, grow, evolve, and get better as a chef. I want to give my guest a chance to try what I did but at the same time, turn it on its head and put my own spin on it!!
It’s that time of year again. Going over ideas and creating the base recipes. Starting the trial & error portion of recipe testing.

Definitely amazing to meet a passionate baker whom share a great deal in common with. was a great way to bring our Finland chapter to a close. Saw, ate, and learned so much from this diverse country. I can’t wait to go back home and figure out ways to make these Finish dishes into Lost Passport dishes
Lost Passport Cafe checked into Estonia and we had to go explore, get lost a few times, and discover some truly unique and amazing foods! This trip is proving there is still so much to see and learn out there.
