Continuing a tradition of preparing Lefse, a Norwegian flatbread, for special occasions has been a passion of mine and now I'm sharing it with Fargo!
Lindsey Lee's Lefse began out of a passion for Norwegian family traditions. As an "adopted" Norwegian, my husband is actually the Norwegian one, I have taken on the tradition of baking lefse at home for family gatherings. In 2016 I wanted to share my passion with more than just family and Lindsey Lee's Lefse was born. Made with love from a time-worn recipe, my lefse is sure to delight and satisfy even the most traditional Scandinavian palette.
I will be accepting orders for lefse the week of Thanksgiving. Please DM with the quantity you want to order for your family gathering or just for the upcoming holidays.

I will be rollin' and flippin' fresh goods to eat as you shop and I will have packs to buy for Christmas as well. All of this week's lefse is made using potatoes from Legacy Gardens in Moorhead! They were so helpful and even offered to trade some potatoes for some lefse of their own 😉
This is Lorene, she is the real-deal, wonderful Norwegian Grandma that everyone wishes they had. She came and helped me prep a whole heap of potatoes this week. She's also responsible for teaching me all of my lefse ways.
