Every week our beef is processed at our USDA facility, Dean & Peeler Meatworks in Poth, Texas. Our Wagyu is scanned and photographed with a special camera to get all the detailed information on marbling scores, fat amounts, fineness grain counts and beyond. Crazy that it’s one email we look forward to seeing each week! All this information helps us improve our final product to the consumer. We can track every detail about our animals from conception to plate. Our goal is to use all this information and continue to improve with more knowledge, good genetics and excellent animal husbandry.
Our wagyu stew meat is cut from our short ribs. It’s tender and perfect in stew, carne guisada and beef stroganoff.

Our classic wagyu bone broth using our grass finished bones, sea salt, pepper, apple cider vinegar, & cinnamon sticks. It may have a little more fat than traditional beef broth but we leave it that way for flavor. Wagyu fat has some pretty great benefits and is tasty. This is a great base broth for cooking purposes and easy to add your own flavors. We will also have some of our flavored broths like turmeric, ginger & lemon at the markets this weekend.

Grass-finished Wagyu is a bit of an anomaly. Usually finished for 60+ days on grain, Wagyu can have intense marbling and nice fat caps. These primals, dry-aged to about 60 days have exceptional beef flavor, but it’s the fat that’s just sublime. Buttery, rich and grassy. Our standard beef cuts from Peeler are free -choice pastured, meaning they’re not on a feedlot, but have access to grass and grain simultaneously. This results in a less-marbled but more flavorful product that also doesn’t have to spend time in an intensive feeding situation. Grass-finished Wagyu Porterhouses, T-bones and (tallow-aged) ribeyes available at until they’re not. Next up: a 6 year old Longhorn steer, 100% grassfed and aged for 60-70 days. We shall see.

I’ve always been a fairly coordinated person. I can throw a football pretty well and I have great hand-eye coordination and balance.
But the second I’m sitting on a horse, the grace of which I move my body is lost and I become Gumby at the mercy of 4 hooves. It’s not pretty.
All this to say I still love horses and cowboys and I love photographing them from my own two feet.
