Well, here we are, friends. The sun has set over the Pizza Posto truck for the last time. We are forever grateful for the love and support you've shown us during the past four years! While we have no immediate plans to open a brick and mortar location, be assured the pizza WILL return one day. In all its chewy, bubbly, locally-sourced glory.

In the meantime, if you'd like to purchase a wood-fired pizza truck, please get in touch! It's been so good to us and we can't wait to see what road it takes next.

Dear friends,

It is bittersweet to announce that the current chapter of Pizza Posto is coming to a close. We are selling our truck—but not our business!—and will be ending the season on Sunday, August 29th. After four phenomenal years of learning and growing, we've realized the future of Pizza Posto is within four walls, not on four wheels. We are excited to start dreaming this new dream and to bring it to fruition when the time is right. Until then, we'll be basking in gratitude for your support of our business since day one, when Pizza Posto was just an idea in The Pitch Competition at Hobart and William Smith Colleges

Special thanks to Spotted Duck, Other Half Brewing, Seneca Yacht Club, Climbing Bines, Muranda Cheese Company, The Cracker Factory, Buttonwood Grove Winery, Reinvention Brewing Company, Billsboro Winery, Bottomless Brewing, and all the individuals and organizations that hosted us over the years. We've met so many wonderful people from your respective communities that have, in turn, become the Pizza Posto community.

From this incredible community came the opportunity to purchase Spotted Duck this past winter. We've been running both businesses in tandem this season, with Pizza Posto permanently parked at the creamery. While we will miss the truck, we are thrilled to focus on Spotted Duck and to continue supporting local farmers through our small batch duck egg custard.

Please stop by and give the truck a proper send-off over the next couple of weeks! We'll be serving at Spotted Duck on Fridays from 5:00–7:30 PM and Saturdays/Sundays from 12:00–7:00 PM.

We have received a lot of questions from our customers about the dough this year. Is it sourdough? How long does it ferment? What’s the secret ingredient? Here are some answers.

This dough contains no secret ingredient. The simplicity of flour, water, yeast, and salt is all you need, along with high quality ingredients. We use Caputo 00 pizza flour from Italy, which is why customers report our pies to remind them of ones they had abroad.

No sourdough here, however the length of fermentation can play a trick on your palate. Our dough bulk ferments for 24 hours, then spends another 48 hours fermenting in the fridge after balling. This time allows for the yeast to work it’s magic, breathing flavor into every pizza.

Our dough has evolved every year since we first began serving in 2018. This year the dough underwent its most drastic evolution, and based on your feedback it seems to be the winner. Big shoutout to our friends at Peels On Wheels for helping us get the dough to where it is today.

Give it a taste this weekend at Spotted Duck. Serving Friday 5:00-7:30, Saturday 12:00-7:00, and closing at 5pm on July 4th.

Four years ago I started Pizza Posto with the goal of using locally sourced ingredients to make delicious pizzas. At the age of 22 I bought a food truck I couldn’t drive (Who drives a stick these days?) and set off on a journey I could not predict.

My first batch of dough was made using expired pasta flour. In the first two seasons the truck died more times than I can remember. I struggled for months to find a suitable commissary kitchen in the city of Geneva. And I knew next to nothing about how to run a small business.

What do all of those hurdles have in common? They were overcome by the overwhelming support I received from family, friends, and most of all from the local community who supported a Finger Lakes transplant pursuing a dream.

I cannot thank our early supporters enough for getting us through the tough times. Pizza Posto would not be serving pizza today without you. 🙏🏼
